I made this recipe for Thanksgiving, however, believe it or not, there was a vegetarian present, so I substituted the chicken broth with apple cider. The flavor was great. I made a version with the recipe as it called for, with the chicken broth and I preferred the one with apple cider better. If using apple cider as the liquid, you may want to decrease sugar. Enjoy.
This was delicious with Christmas dinner. My 2 1/2 year old grandson scarfed them down and asked for more the next day. I used the small already peeled carrots. (any shortcuts on Christmas Day are appreciated). So happy with the results.
This is a great recipe & quite unexpected by guests. I have served it several times now and all my guests want the recipe.
I was looking for a “different” carrot recipe and this one fit the bill. Easy. As other reviewers did, I used fresh cranberries and fresh carrots. I cut back the brown sugar a little. My husband even liked it and he doesn’t usually like cranberries. It is going in my favorites!
I made it at Thanksgiving and Christmas. Everyone loved it. After Thanksgiving I took what was left over (enough for one serving) added some chicken broth and cooked the carrots to soft. Then I blended it and ate it as soup. It was delicious.
A very easy dish to make and a lovely side for Thanksgiving. We all enjoyed it.
Needed to cook it longer and used fresh cranberries.
I halved the recipe and it was perfect for 3-4 people. Boiled the carrots in the broth then drained some into the mixture with cranberries. Added this back into the pot with the carrots and viola!
AS mentioned I found the carrotss a little sweet and I might cut back on the bown sugar.
Excellent! Replaced chicken (don’t eat animals) broth with plain water & it was still excellent! Great way to get immune-boosting carrots & cranberries (to fight a cold &/or flu).
This was a hit at our Thanksgiving meal and even those who don’t ordinarily like cooked carrots loved it. This will be a regular at our holiday meals. Thanks for the recipe!
Followed receipt and turned out great. Wouldn’t change a thing.
Very good. Next time will try to add some orange liquor.
We had a last minute, big group for Christmas. I opted for simple and fast. I parcooked a double batch of already peeled small whole carrots, in the microwave I then added a double batch of the other ingredients and finished microwaving.. The result was a beautiful, sweet side dish the everyone thought was wonderful. Thank You for sharing. This will stay in our favorites of quick, simple but fancy side dishes.
Excellent carrot recipe.
excellent!!!!!! Used a little extra chicken broth and light brown sugar (didn’t have dk brown). Will definitely be making again. Loved the flavor. Thanks for a great recipe.
awesome!! Enjoyed by all even my picky 12 yr old granddaughter. Had to cook in microwave longer, no biggee. Thank you, for sharing!
the carrots remained hard after microwaving for 15 minutes, perhaps a fault of the carrots? Baked the whole thing in the oven for 1/2 hour after that, and the sauce was like water and did not soak into the carrots and berries at all. Will try again with stovetop cooked carrots, make the sauce separately and thicken and then pour over the top and bake.
I did add some raisens , walnuts and apples. it was a wonderful dish. I will make it again
Followed the recipe exactly, and cooked the entire thing in the microwave. The end result is as pretty as the photo and tastes great. So easy. Will make this again and again.
Pinch of nutmeg. Cooking now, tasted recipe before.
