This broiled red snapper recipe might be exactly what the doctor ordered if you don’t cook fish very often or don’t enjoy fish. In most cases, we like to leave the delicate flavors of the seafood alone, but in this instance, we are unable to do so. Even though you can still tell you’re eating fish, the flavor is similar enough.

Ingredients
- 1 tablespoon canola oil
- 1 ½ pounds carrots, peeled and cut into 1/4-inch rounds
- ⅓ cup seedless golden raisins
- ¼ cup freshly squeezed orange juice
- 1 ½ tablespoons honey
- 1 ½ tablespoons brown sugar
- kosher salt and ground black pepper to taste
- 2 tablespoons minced fresh parsley
Instructions
- Heat oil in a pan over medium-high heat. Add carrots, raisins, orange juice, honey, brown sugar, salt, and pepper; bring it to a boil. Reduce heat; cover and simmer until carrots are tender, about 25 minutes. Uncover, raise heat to high, and cook until sauce has thickened, about 5 minutes. Sprinkle parsley on top before serving.

Good and easy recipe but it cooked down to nothing. I maybe have enough for the four people I’m having for dinner. Just make more and you’ll be ok.
I added a little Grand Marnier
These were pretty good, but a bit on the sweet side for us (personal taste preference). To me, except for the addition of the golden raisins, they’re very similar to basic candied carrots.
