Broiled Blue Cheese Tomatoes

Ingredients

  1. 1 tablespoon butter
  2. 3 tablespoons panko bread crumbs
  3. ⅛ teaspoon garlic powder
  4. 4 roma (plum) tomatoes
  5. 1 tablespoon olive oil
  6. salt and freshly ground black pepper to taste
  7. ¼ cup crumbled blue cheese

Instructions

  1. Set an oven rack 4 to 5 inches from the heat source and preheat the oven’s broiler.
  2. Melt butter in a small skillet over medium heat. Stir in panko bread crumbs and garlic powder until well combined and cook until bread crumbs are very lightly browned, 1 to 2 minutes. Remove from heat.
  3. Cut tomatoes in half lengthwise and place on a baking sheet, cut sides up. Brush with olive oil and sprinkle with salt and pepper. Broil tomatoes until warmed through and lightly browned, about 3 minutes.
  4. Finely chop blue cheese if there are any large chunks. Sprinkle on top of tomatoes, then top with bread crumb mixture. Broil until cheese is melted and bread crumbs are golden brown, about 1 more minute. Watch carefully, as bread crumbs can burn quickly.

Calling all tomato and blue cheese lovers out there!! Try this recipe!! This was AMAZING! My only change was to double the panko crumbs. Next time? I might (MIGHT!) triple. The flavor and texture profile of this recipe is off the charts! Served with steak and we couldn’t decide more which we liked better! Well? Next time we just make both again!! Thanks FranceC for a recipe that will land on my many of my menus in the future!! 10 stars!

Excellent with only change was large garden tomatoes. Usually I add extra cheese to everything, but do not do it with this please..
