Broccoli Rice

Rice with broccoli is a fantastic low-carb side dish. Delicious either by itself or in place of rice under your preferred stir-fry or sauce. Additionally, it is delectable as a taco filling, on top of a grain bowl, or cooled and added to a salad. As desired, add additional herbs and tastes!

Ingredients

  1. 1 (12 ounce) bag broccoli florets
  2. 2 tablespoons olive oil
  3. ½ small onion, minced
  4. 2 large cloves garlic, minced
  5. ¾ teaspoon sea salt
  6. ¼ teaspoon ground black pepper
  7. 1 lemon, juiced

Instructions

  1. Place 1/2 of the broccoli florets in a food processor; pulse about 20 times until broccoli looks like grains of rice. Repeat with remaining broccoli florets.
  2. Heat olive oil in a large skillet over medium-low heat. Add onion; cook and stir until softened, about 3 minutes. Stir in garlic; cook for 30 seconds. Stir in broccoli rice, salt, and pepper. Reduce heat to low and cook, covered, until broccoli has softened, about 5 minutes. Pour lemon juice on top.
  3. Raw broccoli rice can be stored in the refrigerator, covered, for up to 5 days.

A really tasty low-carb alternative! The only change I made was with the cooking time/method. I find cooking cauliflower or broccoli rice at low temps causes it to be mushy, so after cooking the onion and garlic on medium-low, I cranked up the heat to medium-high to stir-fry it for 3-4 minutes. That helps it get done quickly (the small pieces don’t need a long cook time) without overcooking and keeping some texture to it. Once the broccoli starts turning a muted green color, that’s when you know it’s starting to overcook.

Delicious and so quick and easy to make. I didn’t know what to expect and I was pleasantly surprised. I also like the fact that it is low in calories.

This is an excellent replacement for rice! I did cook mine a little longer to get some char on it but only due to personal preference.
