In order to make baking a little bit healthier, I read that mashed avocado can be used in place of all or some of the butter. I pulled out my dad’s favorite cookie recipe and gave it a try. Half the butter was swapped out. I couldn’t tell there was avocado in them, but they were still extremely tasty.

Ingredients
- 1 ½ cups uncooked long-grain rice
- 1 tablespoon vegetable oil
- 1 (16 ounce) package frozen broccoli florets, thawed
- 3 green onions, diced
- 2 eggs, beaten
- 2 tablespoons soy sauce
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- In a saucepan, bring 3 cups water to a boil. Stir in rice. Reduce heat, cover, and simmer for 20 minutes.
- Heat oil in a large skillet over medium heat. Saute broccoli until tender crisp, and add scallions. Remove from skillet. Scramble eggs; return broccoli mixture to pan. Stir in cooked rice, soy sauce, salt and pepper.

Simple and so yummy! It reminds me of Peruvian Fried Rice that I make sometimes except that recipe calls for cut up hot dogs or any other protein. This way is healthier. Instead of soy sauce, I have started using Coconut Aminos, much healthier and a lighter taste.
I used a variety of vegies to make it even healthier. I should have used more soy sauce and ginger – will next time. It was still yummy!
This was ok. I did a few things differently – I used leftover cooked rice from the night before (always better for fried rice in my opinion), fresh veggies, and used a mix of broccoli, cauliflower, carrot and mushrooms. This was ok as far as fried rice goes, and my 4yo who normally doesn’t like rice ate it up so that’s a plus, but I probably would use another recipe in future as this was a bit bland and dry.
I basically used this as a base recipe. I had day old rice on hand and decided to try this recipe, but found it lacking. So I diced a chicken breast and fried it in vegetable oil with a splash of sesame oil, also added a tbsp of minced garlic ground ginger, and lemon pepper. I added that to the rice and broccoli, used 3 tbsp of soy sauce. It was just salty enough from that, so I didnt add any additional salt. We are a bacon loving family so I added 2 strips of crumbled bacon. As one reviewer mentioned, I added the eggs very last, and that was awesome because it coated everything and tastes great. I definitely strayed far from this recipe but Im glad to have it on hand as a base.
I added zucchini, ginger, and used red pepper flakes instead of black pepper. We like some spice! Also another tablespoon of soy sauce. Nothing left!
Great easy recipe! it just needs some more seasoning (A little more soy sauce) and it would be perfect!

This was really easy and good. Made my rice the night before so it would be cold. I added chicken, garlic and little bit of sesame oil to the dish. Def a keeper. Will make again.
Would have given it 5star if it had enough seasoning. I added few fresh veg-carrot, bell peppers, zucchini along with fresh broccoli that i had par-boiled.Also sauted1large white onion with 2tsminced ginger&1ts garlic.For the quantity it definitely needed more salt-3ts,6tb soy sauce,2 tb chilli vinegar,3tb teriyaki sauce.Else it tasted bland.make sure to cook the veg. to desired softness(medium heat) before adding rice.Thanks.

I made this last night along with the easy garlic broiled chicken recipe from here that I make often. The rice was delicious. I omitted the onions, used brown rice & added a little more soy sauce (reduced sodium soy sauce). My husband couldn’t eat enough!

I used this recipe as a base like many other reviewers. I added boneless skinless cubed chicken and cooked it in lemon pepper, oil, garlic and red pepper flakes. I love eggs so I added an extra egg to the recipe as well to make sure most of my bites had some, I was also generous with the soy sauce and didn’t really measure it out by any other measuring system aside from taste tests. Once everything was mixed together I also added a generous amount of sriracha sauce (we love spicy in my family) and it made for an amazing main dish.
Added more vegetables, and some steak. Turned out to be quite yummy
