Broccoli and Rice

I’ve been using this recipe for years and always coming back to it. This fantastic side dish has a crust made of mashed potatoes.

Ingredients

  1. 1 head broccoli, stalk and florets chopped separately
  2. 2 cups water
  3. 2 tablespoons olive oil
  4. 1 tablespoon minced garlic
  5. ½ cup uncooked white rice
  6. salt to taste
  7. 1 squeeze lemon juice

Instructions

  1. Combine broccoli stalk and 1 cup water in a blender; blend until puréed. Add remaining cup of water for a total of 2 cups of green water to cook rice in.
  2. Heat olive oil in a saucepan over medium heat and cook garlic until fragrant, 1 to 2 minutes. Add rice and cook and stir for 3 minutes. Add chopped broccoli florets, green water, and salt; bring to a boil. Reduce heat to low and simmer until rice is tender, 15 to 20 minutes.
  3. Fluff cooked rice with a fork and squeeze lemon juice on top before serving.

I used basmati rice and fresh broccoli, followed it as directed. I’ll steam the broccoli next time to improve color. Lemon was a good addition. Lacks some zip, perhaps broth would improve the flavor. However if it has rice as an ingredient I’m all in!
