Ingredients
- 1 ½ cups fresh blueberries
- 3 tablespoons white sugar
- 1 lime, juiced
- 3 sprigs fresh thyme, leaves stripped and chopped
Instructions
- Combine blueberries, sugar, lime juice, and thyme leaves in a small saucepan over low heat. Bring to a simmer and cook until sauce starts to thicken, 15 to 20 minutes.

Easy and tasty but a little too sour for our taste. I would use less lime and substitute a little water for it. I used a bit more sugar too. Generally though – this was great on our cheesecake. I didn’t realize how it easy it was to make a quick compote!
