I had never used beet greens before and wanted to mix them with kale. I would most likely keep this as a go-to green in our home because it tasted so good!

Ingredients
- 1 tablespoon olive oil
- 1 slice bacon, trimmed of fat and cut into small pieces
- 2 cloves garlic, pressed
- 6 leaves beet greens, stems cut into 2-inch pieces
- 2 leaves kale, ribs and stems removed, chopped
- salt and ground black pepper to taste
Instructions
- Heat olive oil in a large skillet over low heat. Cook and stir bacon until browned and crisp, 3 to 5 minutes. Add garlic; cook and stir until golden brown, 1 to 2 minutes.
- Stir beet stems and kale into the skillet. Cover skillet and cook until kale wilts, about 3 minutes. Add beet greens. Cover and cook until bright green and wilted, 1 to 2 minutes. Season with salt and pepper.

I used organic trimmed bacon with olive/hemp oil. I also added a few drops of lemon juice at serving time. I’ll make this again!
Why discard all the tasty bacon fat just to replace with olive oil?! I kept the fat on & used it to sauté. It turned out great
I was looking what was left in the garden and what I had in the fridge. I googled kale, beets and bacon and happily found this recipe. I doubled the quantities, but otherwise didnt change anything. This is really delicious and really easy to make. I hadnt used beet leaves or stems before so that was a treat.

I also doubled the recipe of beet greens since I didn’t have any kale either but at the very end I splashed a little apple balsamic vinegar over it. Gave it a touch of tang and it reminded me of the wilted greens my mom and grandmother would make using sugar and vinegar at the end.
I only had beet greens but followed the recipe as written otherwise and it turned out great! Simple and easy and very flavorful. I will try it with other types of greens. Yum!
Delicious. I used 2 slices of turkey bacon and changed the kale out for more beet greens. Quick, easy, healthy and tasty.
Use only beet greens (did not have any kale). Used hard chirizo instead of bacon, add one finely chopped Fresno pepper with the garlic. Fantastic, will make again

While I didn’t love this my husband did. I’m just not a huge a kale fan. The recipe makes a small portion and I would double if I was making this for more than 1-2 people.
