Ingredients

  1. 5 pounds Yukon Gold potatoes, peeled and cubed
  2. ½ cup butter
  3. ¼ cup milk
  4. 1 (8 ounce) package cream cheese, softened
  5. 1 medium onion, grated
  6. 1 large egg
  7. salt and pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  2. Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce the heat to medium-low and simmer until tender, about 20 minutes.
  3. Drain potatoes and transfer to a large bowl. Add butter and milk, and mash to combine. Add cream cheese and onion; beat with an electric mixer until smooth.
  4. Whisk egg in a small bowl. Add one spoonful hot potatoes, whisking quickly to avoid scrambling the egg. Pour mixture back into the bowl and stir to combine with remaining potatoes. Season with salt and pepper. Transfer to the prepared casserole dish.
  5. Bake in the preheated oven until puffy and golden brown, about 1 hour.

AMAZING!! The most important part for me is to not overboil the potatoes. I like them to still be a bit firm and you have to use some elbow grease to hand mash them. It makes all the difference in my book! I did make a few changes… omitted onion, added heaving whipping cream in lieu of milk (it’s what I had), omitted cream cheese and added sour cream (again, it’s what I had), and I also added a few cubes of Babybell Garlic & Herb cheese. It was sooo good. One of my favorites that I’ve found on AR. Thank you!

Made this today with Christmas dinner. Was cooking potatoes for dressing first thing this morning so cooked enough to do both. These went in the oven while the dressing was being made and came out when the turkey was ready to go in. They were amazing. Didn’t change a thing. Everyone said they were the best ever!!!

Ok…. so I boiled the 5 lbs for 25 min (not 15). Added the garlic and definitely don’t skip using the hand mixer to mix in the softened cream cheese. I left the block out side while I boiled the potatoes. Oh and I also did 1/2 cup of milk instead of 1/4. Winner.

I made this recipe just as the directions stated with the exception of the onions, I used 1/4 cup of green onions. It was to die for. I made this as a side dish for cube steaks the gravy from the cube steak and these mashed potatoes was absolutely scrumptious..I will definitely make these again!!!

I used 1 tablespoon of grated onion as indicated by the person who submitted the recipe. Made the potatoes the night before and baked them the next day. Super easy and delicious!

Doesn’t need the egg, and doesn’t need to be baked. Extra stuff ruins a perfect dish. I tried it at both points in the recipe. It was better before the egg and before baking.
