Bacon-Wrapped “Caramel” Corn on the Cob

Before being grilled or baked, fresh ears of corn are wrapped in bacon and dusted with a mixture of butter and brown sugar. Decadent, to put it mildly. but well worth the accolades you’ll receive at the BBQs this summer!

Ingredients

  1. 6 ears corn, husked
  2. ½ cup butter, melted
  3. 1 pinch salt (Optional)
  4. ½ cup firmly packed brown sugar
  5. 1 (12 ounce) package smoked bacon

Instructions

  1. Place each ear of corn on a sheet of aluminum foil large enough to wrap it completely; brush with butter. Season with salt.
  2. Spread brown sugar evenly on a large plate. Roll buttered corn in brown sugar.
  3. Wrap 2 bacon slices around the length of each ear of corn. Wrap foil around corn, enclosing it completely.
  4. Preheat grill for medium heat and lightly oil the grate. Cook foil-wrapped corn over indirect heat, turning occasionally, until corn is tender and bacon is crisp, 35 to 45 minutes.
  5. Instead of grilling, you can bake corn in a baking pan lined with parchment paper at 375 degrees F (190 degrees C) for 35 to 40 minutes. Use tongs to turn the cobs every 10 to 15 minutes. For crispier bacon, increase oven temperature to 425 degrees F (220 degrees C) and cook 10 to 15 minutes more.

This turned out even yummier than I thought it would! I did just two ears, in the oven. My minor changes were that I cooked at 350F for a total of an hour and ten minutes, didn’t add the butter and I did not wrap the ears in foil. The bacon I used was extremely thin, and very fatty. The corn was not overdone, was plenty tasty with just the rendered bacon fat, and the bacon was truly super delicious! This was easy, and I don’t think I can have out-of-season corn any other way from now on.

Made as written in the foil on the grill. After 45 minutes my corn was getting to the point of being overdone and as you can see from the picture, my bacon was not near done enough. I really liked the flavor combo and I think this recipe has potential however wrapped up in foil the bacon never will crisp up. I plan on experimenting with this again. Next time I will pre-cook my bacon some, pin it onto the corn with toothpicks and then grill it over open flame instead of in the foil.
