Bacon-Wrapped Asparagus Spears with Tomatoes and Taleggio Cheese

During our first night together in our brand-new apartment, Mike came up with this recipe! We utilized it as a side dish rather than an antipasti plate since we were inspired by a meal of a similar nature we had at an Italian restaurant, and we replaced the prosciutto with bacon. Due to its rising popularity, the cheese—a mild cow’s milk cheese—should be quite simple to find. Super yummy and simple to make!

Ingredients

  1. 1 tablespoon olive oil
  2. 1 clove garlic, thinly sliced
  3. 12 spears fresh asparagus, trimmed
  4. 1 cup grape tomatoes, halved
  5. 1 teaspoon lemon juice
  6. 4 slices hardwood smoked bacon
  7. ¾ pound Taleggio cheese, cut into 1/4-inch pieces

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Cook and stir garlic until fragrant, about 2 minutes.
  3. Stir asparagus and grape tomatoes into the garlic and drizzle with lemon juice. Continue to cook and stir until asparagus are tender, 5 to 7 minutes.
  4. Wrap 3 asparagus spears with 1 slice of bacon. Repeat with remaining asparagus and bacon, making 4 bundles. Arrange wrapped asparagus on a baking sheet.
  5. Scatter cooked grape tomatoes around the wrapped asparagus.
  6. Bake in the preheated oven for 5 minutes, then scatter Taleggio cheese atop asparagus; return baking sheet to the oven.
  7. Continue baking until bacon is crisp, 5 to 7 minutes more.

Didn’t turn out — bacon didnt get crisp quick enough — i overdid the asparagus, cheese, and tomatoes. I had doubled the recipe, so maybe that’s part of what went wrong… but it really didn’t turn

I prepared ahead of time to take to deer camp. Cooked them in foil. Probably should have opened the foil to allow the bacon to crisp up a bit, but had limited space. Had great flavor and the presentation was beautiful.

Robust, diverse flavor with a nice tangy finish. I’ve made it twice already in two days and will make it again soon! Havarti cheese works as well with some basil sprinkled on top.
