Bacon-Garlic Green Beans

This is one of the recipes my family adores, and my hometown hosts a pumpkin festival every year.

Ingredients

  1. 3 pounds fresh green beans, trimmed
  2. 4 slices bacon
  3. 1 cup butter
  4. 4 cloves garlic, minced
  5. ½ teaspoon lemon zest

Instructions

  1. Place green beans in a pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 10 minutes. Drain water, leaving beans in the pot.
  2. Place bacon strips on a microwave-safe plate and cook in the microwave until crisp, about 2 minutes. Cool and crumble bacon.
  3. Stir butter and bacon into beans in the pot and return to medium heat; cook and stir until butter melts, 2 to 3 minutes. Add garlic; cook and stir until fragrant, 3 to 4 minutes. Top with lemon zest and stir.
  4. Remove the bacon for a healthier dish. However, adding the bacon is a great option that adds flavor to the beans.

Made it for Easter dinner no deviations. Did not add salt or pepper, due to a limited salt diet, everyone loved them, some added salt & pepper, some did not. Cooked bacon the night before.

Everyone loved it, it was delicious! The only things I changed is that I steamed the beans instead of boiling them (healthier) and I sautéed the garlic in the butter before adding the beans. I will definitely make these again.

Fairly easy and tasty. I only had 2.5 lbs of beans and used 1/4 cup of butter and that was PLENTY! I forgot to add the lemon zest and I am sure that would have been great to top it off. I also added a few shakes of salt as my butter was unsalted.
