Asparagus with Lime and Ginger

Ingredients

  1. 1 ½ pounds fresh asparagus, trimmed
  2. 2 tablespoons fresh lime juice
  3. 1 teaspoon grated lime zest
  4. 1 tablespoon chopped fresh cilantro
  5. 1 ½ teaspoons minced fresh ginger root
  6. ½ teaspoon white sugar
  7. 6 tablespoons vegetable oil
  8. salt and ground black pepper to taste

Instructions

  1. Pour about 1 inch of water into the bottom half of a steamer pan set, and place over medium heat. Place the asparagus in the top half of the steamer pan set; steam until tender, 4 to 5 minutes. Remove the asparagus and arrange on a serving platter.
  2. Whisk the lime juice, lime zest, cilantro, ginger, and sugar together in a bowl; stream the vegetable oil into the mixture while whisking. Season with salt and pepper. Drizzle over the asparagus.

I loved this recipe, I served it with some spicy blackened salmon & it paired perfectly. Only things I did differently was air fry the asparagus (400° for 10 min) & had to use dried spices instead of fresh since I couldn’t run to the store but will try it with fresh eventually.

4.25.21 Only modification I made was cutting back the amount of oil, and I used olive oil instead of vegetable oil. I steamed the asparagus spears in my microwave steam pot for 1-1/2 minutes, and they were perfect, tender but still crisp. Really enjoyed that fresh, tangy kick you get from the lime. Tasty recipe, thanks for sharing.

This is delicious. It works well without the cilantro if you don’t have any on hand. Just be careful not to overlook the asparagus. I’m going to try this with other green vegetables.

Delicious! Who knew asparagus and lime were such complementary flavors?!? I prepared the recipe exactly as written, except instead of vegetable oil I used olive oil, and I probably used about half of the oil suggested (I drizzled oil into the dressing ingredients until I was just able to stir it – probably about 3 Tbsp). I wouldn’t have wanted it any oilier. This made a fantastic side for Pineapple Spiced Chicken and Rice (also from this site). Thanks for a keeper recipe!

This was really good. I steamed the asparagus with salt and pepper then for the topping I used olive oil instead of veggie oil and nixed on the cilantro. I added into the mix some fresh basil and parsley then sprinkled on a little extra sugar over the asparagus after it was cooked. That sugar really kicks things up a bit. Very delicious if I must say.
