Asparagus with Garlic and Onions

Have any candy from Halloween left over? Make it into a dessert that the entire family will enjoy. The addition of candy bar pieces enhances these blonde brownies. For a sweet flavor, use chocolate candies, or for a rich flavor, use sweets made of nuts.

Ingredients

  1. ¼ cup water
  2. ½ pound fresh asparagus, trimmed
  3. ½ cup diced white onion
  4. 3 tablespoons butter
  5. salt and black pepper to taste
  6. 2 cloves garlic, thinly sliced

Instructions

  1. Pour water into a skillet. Place asparagus and onion in the skillet. Bring water to a boil over medium heat. Cover skillet and steam asparagus and onion 2 to 5 minutes, just until slightly tender. Add a few tablespoons of extra water, if needed, to maintain steam.
  2. When water has steamed off, immediately place butter in skillet. Continue cooking until onions and asparagus are lightly browned. Mix in garlic, and continue cooking about 30 seconds. Season with salt and pepper to taste.

This is really good. You do have to watch it to make sure you don’t over steam the asparagus before adding the butter. I used a lot less butter and a lot more garlic. I added thinly sliced tomato the last 30 seconds or so. I probably will do this again because we enjoy asparagus.

That was a beautiful recipe. I couldn’t believe how nicely the white onions complemented the flavours of the asparagus. Just to put a small spin, I added two finely chopped red chillies into the dish, along with the garlic and it gave it a cook that we really enjoyed. Served it with couscous and sweet corn. Yummy.

This was very tasty! Asparagus tastes best in simple dishes like this one! I put the garlic through a garlic press because we don’t like big chucnks of garlic. This was delicate and flavorful. Next to grilling asparagus this is my new favorite!

I was careful to watch this very attentively, and because I did I was rewarded with beautiful crisp/tender, steamed/browned asparagus – and I didn’t bother to cover it at all. Delightful, attractive, and a pleasure to eat asparagus that was neither too crunchy nor cooked to mush. The onions and garlic were great flavor enhancers, but to kick it up a notch I sautéed some chopped yellow and red bell peppers along with the garlic and onions for additional flavor and garnish. Some halved cherry tomatoes would be nice too! Served this with “Pork Tenderloin Diane,” and “Lemon Pepper Pasta,” recipes also from this site. Hubs declared it a home run dinner, perfect to usher in spring.
