The flavor in these delicious, simple-to-make pork chops comes from caramelized onions. fantastic with parsley potatoes!

Ingredients

  1. 1 bunch fresh asparagus, trimmed
  2. ⅔ cup water
  3. ¼ cup olive oil
  4. ½ cup grated Parmesan cheese
  5. 10 grape tomatoes, halved

Instructions

  1. Combine the asparagus and water in a 10 inch skillet and place over medium heat; cover. Allow the asparagus to steam until tender, about 10 minutes; drain. Reduce heat to low and return the skillet to the heat. Drizzle olive oil over the asparagus; sprinkle with Parmesan cheese. Add the grape tomatoes to the skillet and replace the lid. Allow to sit covered until the cheese melts and the tomatoes are slightly steamed, about 2 minutes.

Way too much olive oil! I ended up spooning most of it out and it was still way too oily. Next time I’ll add just a drizzle or two of olive oil and at least triple the tomatoes. I added in some pepper and that was a nice addition. It doesn’t need any salt, the parmesan cheese covers the salt aspect.

Simple, easy, good. I read a tip to steam vegetables in club soda to keep the color bright, it totally worked! I did add garlic powder and salt, but that’s just for my personal tastes.

I adapted this for the grill by not steaming but rather grilling the asparagus and olive oil over low direct heat for about 10 minutes then adding the tomatoes for about 3 more minutes.

Brought as a cold BBQ side. I blanched the asparagus then threw it in ice water. Chopped it to bite size tossed with minced garlic olive oil salt pepper. Added prosciutto shreds. Grape tomatoes and Parmesan flakes. Really good!

I loved loved this recipe and so did my family. The only thing I changed was the parmesan cheese. I used grated Italian cheese and I used delivered almonds to top it. Oh and I feel you can use those super sweet cherry tomatoes too. So so good! Thanks for sharing.

I use an electric steamer for all of my veggies, so I only steamed the asparagus for half the time before transferring into a pan and sauteeing with the tomatoes. I’ll add more cheese next time. Yummy! NB – In photo is the asparagus side and salisbury steak with mushrooms, also on All Recipes.

These were a delicious side dish and I love how this dish not only included the asparagus but also added ingredients like tomatoes. Even thought I personally don’t like asparagus it was a huge hit with my family and they enjoyed it all the way.
