Asian-Inspired Green Beans and Mushrooms

This simple and tasty side dish of green beans and mushrooms has the ideal balance of sharpness and sweetness to go with any meal.

Ingredients

  1. 1 tablespoon olive oil
  2. 3 cups chopped fresh mushrooms
  3. 3 cups chopped fresh green beans
  4. 2 tablespoons rice vinegar
  5. 1 tablespoon light soy sauce, or to taste
  6. 1 teaspoon honey
  7. ½ teaspoon sesame oil
  8. 2 dashes hot pepper sauce (such as Tabasco®)
  9. salt and ground pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add mushrooms and saute for 2 to 3 minutes. Add green beans and cook until bright green, about 3 minutes. Drain off excess water, if needed.
  2. Add vinegar, soy sauce, honey, sesame oil, hot sauce, salt, and pepper; saute until mushrooms are soft and beans are well coated, about 3 more minutes. Serve.

Followed the recipe except for slicing the mushrooms rather than chopping (personal preference). The green beans were not cooked after 6 minutes, took about another 3 minutes, and by then, the mushrooms were overcooked. Next time, I might just saute the mushrooms, then remove from the skillet, and add back as the green beans are nearing being cooked. Really nice flavor, super easy, and I like the way this recipe breaks down nutritionally.
