A flavorful side dish with green beans and feta that uses the crumbled cheese as an accent.

Ingredients

  1. 2 teaspoons olive oil, or as needed
  2. 1 red bell pepper, chopped
  3. 1 tablespoon minced garlic, or to taste
  4. salt and ground black pepper to taste
  5. 1 pound green beans, cut into 1-inch pieces
  6. ¼ cup white wine
  7. ¼ cup crumbled feta cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Stir red bell pepper and garlic into hot oil; season with salt and black pepper. Cook and stir until the bell pepper is tender, 5 to 7 minutes.
  2. Stir green beans with bell pepper. Pour white wine over the green bean mixture. Place a cover on the skillet and cook until the green beans are tender, about 10 minutes.
  3. Stir the green bean mixture. Sprinkle feta cheese over the mixture. Replace cover and continue cooking until the feta softens, about 3 minutes.

This is my favorite side dish recipe! I don’t usually have a bottle of white open, so I use a little chicken stock instead. Tastes fantastic! I’m always buying green beans and feta at Costco, and need to find ways to actually use them all! I make this at least once a week.

As written, it was not tasty enough for me. The feta added taste, but then the feta taste was overpowering. I added things, but never really got it to a flavor I enjoyed. I did eat it, but will not make it again.

This was pretty good. I used queso fresco instead of feta since it’s another crumbly cheese and that’s what I had on hand. I also added some garlic powder cause I wasn’t picking up the wine so it needed some flavor.
