Ana’s Spicy Chipotle Tomatillo Sauce

This wonderful citrus brine for turkey will guarantee that your bird is incredibly moist. The brine can be used sparingly to other poultry.

Ingredients

  1. 2 fresh tomatillos, husks removed
  2. 1 clove garlic, peeled
  3. water as needed
  4. 2 chipotle peppers in adobo sauce
  5. 1 pinch salt

Instructions

  1. Place tomatillos and garlic in a saucepan and cover with water. Bring to a boil, reduce heat, and let simmer over medium-low heat until tomatillos are very soft and opaque, about 10 minutes.
  2. Transfer mixture to an electric blender along with chipotle peppers. Blend with enough cooking liquid for desired consistency. Season with salt.

  4. You can season with chicken consomme instead of salt, if preferred.

Simple and good. I did end up adding another tomatillo because the ones at the store were really small this time of year. I know this sounds crazy but if you use fresh fried tortilla chips instead of the pre-packaged kind, the sauce almost has a fried green tomato taste to it. While I did like this sauce, I still prefer the more traditional all green tomatillo sauce.
