Air Fryer Polenta Pizza Bites

Crispy on the surface, soft within, and topped with melty cheese. If Italian herb polenta is not readily available, season the rounds with Italian seasoning after brushing with EVOO. Although I prefer these as is, feel free to add some more pizza flavor by dipping them in marinara or pizza sauce. If desired, add parsley as a garnish.

Ingredients

  1. 1 (16 ounce) package Italian herb polenta tube, cut into 1/2 inch slices (12 slices)
  2. 2 teaspoons extra-virgin olive oil
  3. 1 (2.25 ounce) can sliced ripe olives, drained
  4. ¼ cup shredded mozzarella cheese

Instructions

  1. Preheat an air fryer to 400 degrees F (200 degrees C).
  2. Place polenta rounds on a cutting board and brush both sides with extra-virgin olive oil. Transfer 1/2 of the rounds to the air fryer basket.
  3. Air-fry for 15 minutes. Using tongs, flip rounds over, and cook for 5 minutes more. Sprinkle 1/2 of the sliced olives over the polenta and top with 1/2 of the mozzarella cheese. Cook until cheese has melted, about 2 more minutes.
  4. Repeat with remaining half of polenta rounds, olives, and mozzarella cheese.

Made these as a quick lunch. I didn’t have Italian polenta so I used a tub of regular and sprinkled Italian seasonings before brushing them with the olive oil. While I made four rounds I made as written (olives and cheese only), I also had had some deli pepperoni that I needed to use up. My pepperoni slices were larger than the polenta rounds so I sliced in half and then layered two halves to make one slice of pepperoni – slightly overlapping. I put the black olives first, then pepperoni, topped with mozzarella cheese. We liked the added flavor of the pepperoni. Served with marinara. Liked the crunchy polenta pizza bites! Really good, mostly easy and husband and I agree, we should make again! Upgraded pizza bagels for a snack or light meal! Thanks Nicole!!
