Ingredients
- 1 (16 ounce) package Italian herb polenta tube, cut into 1/2 inch slices (12 slices)
- 2 teaspoons extra-virgin olive oil
- 1 (2.25 ounce) can sliced ripe olives, drained
- ¼ cup shredded mozzarella cheese
Instructions
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place polenta rounds on a cutting board and brush both sides with extra-virgin olive oil. Transfer 1/2 of the rounds to the air fryer basket.
- Air-fry for 15 minutes. Using tongs, flip rounds over, and cook for 5 minutes more. Sprinkle 1/2 of the sliced olives over the polenta and top with 1/2 of the mozzarella cheese. Cook until cheese has melted, about 2 more minutes.
- Repeat with remaining half of polenta rounds, olives, and mozzarella cheese.

Made these as a quick lunch. I didn’t have Italian polenta so I used a tub of regular and sprinkled Italian seasonings before brushing them with the olive oil. While I made four rounds I made as written (olives and cheese only), I also had had some deli pepperoni that I needed to use up. My pepperoni slices were larger than the polenta rounds so I sliced in half and then layered two halves to make one slice of pepperoni – slightly overlapping. I put the black olives first, then pepperoni, topped with mozzarella cheese. We liked the added flavor of the pepperoni. Served with marinara. Liked the crunchy polenta pizza bites!
