Zinfandel Glazed BBQ Beef Short Ribs

Ingredients

  1. 6 beef short ribs, 2-inches thick, cut across the bone
  2. Salt and freshly ground black pepper
  3. Dry rub seasoning mix
  4. 1/2 cup olive oil
  5. 4 poblano peppers, diced
  6. 4 medium yellow onions, diced
  7. 4 stalks celery, diced
  8. 1/4 cup sliced garlic
  9. 1 bottle red wine (recommended: Zinfandel)
  10. 1 quart barbeque sauce
  11. 1 quart of chicken stock
  12. Horseradish mashed potatoes, for plating, optional
  13. Sweet corn salad with basil vinaigrette, for plating, optional

Instructions

  1. Preheat oven to 350 degrees F.
  2. Season short ribs with salt, pepper, and seasoning mix. Heat a large roasting pan with lid over medium high heat and add oil. Sear ribs in hot oil on all sides until well browned.
  3. Remove from roasting pan and set aside. Add peppers, onions, celery and garlic and cook until well browned. Deglaze roasting pan with red wine, then add barbeque sauce and stock and bring to a boil. Return ribs to roasting pan and cover tightly with foil. Place in preheated oven and braise for 2 1/2 hours, or until meat is tender when pierced with a fork.
  4. Remove ribs from sauce and keep warm. Skim fat from the top of sauce and season with salt and pepper. Pour sauce over short ribs and serve with horseradish mashed potatoes and sweet corn salad with basil vinaigrette.

I liked the meal very much but the recipe isn’t very specific. I didn’t know what kind of Dry rub to season the short ribs and how much red wine to put. but my family did really like this recipe.

I had all the ingredients except the peppers they indicated, I just used green peppers instead. This meal was very easy and my husband called me to tell me they were the best he’s ever had! I only wish we could go to the Zin restuarant to try other tasty meals. Thanks.

This is a great recipe! Super easy. I have used this recipe several times and it is always a big hit. Use a decent Zinfandel and if you substitute with other red wine it misses the point of the restaurant recipe but still good. I have also used this recipe to braise whole beef brisket. YUM!
