Ingredients
- 1 tbsp. canola oil
- 3 pounds bone-in beef chuck short ribs
- 2 medium onions, peeled and quartered
- 2 medium carrots, cut into large chunks
- 2 medium parsnips, cut into large chunks
- 2 medium turnips, peeled and cut into large chunks
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 4 sprigs fresh parsley, stems and leaves separated
- 1 tbsp. Worcestershire sauce
- 1 tbsp. spicy brown mustard
- 1 (12-ounce) dark stout beer, such as Guinness
- Kosher salt
- Black pepper
Instructions
- In a large skillet over medium-high heat, add the oil. Season the short ribs with salt and pepper. When the oil is hot, brown the short ribs, in batches, until they are browned on all sides, about 3-4 minutes per side.
- While the short ribs are browning, place a layer of onion and carrot pieces into the bottom of a slow cooker and season them with salt and pepper. Place the browned meat on top. Add the remaining onions and carrots along with the parsnips and turnips. Tie together the rosemary and thyme with the parsley stems and add them to the pot along with the Worcestershire and mustard. Pour over the stout and add enough water to almost cover the contents. Cover and cook on low for 6-8 hours, or until the meat is very tender.
- To serve, carefully remove the meat and vegetables from the slow cooker. Strain the juices. Serve the ribs with the juice and garnish with chopped parsley leaves.

This was a complete flop. Followed recipe plse save your money there are much better recipes on this site for short ribs!
I have made this 3 different times. The first time, I followed the original recipe, and I found it had almost no flavor. The next two times I followed recommendations in the reviews and have still been disappointed. It also only needs like 5 hours on low or it’s overdone. I really wanted to make this recipe work but won’t be trying it again.
Very disappointed! Not flavorful! I added beef broth as well instead of water and thickened gravy . Definitely not a keeper!
This recipe was great. The extra water made thin gravy soo added some cornstarch the last hour

I followed the recipe with the exception of the beer. I added 1 cup red wine and beef stock. It was amazing!
this was absolutely horrible. I followed the tips here, added 1tbs brown sugar, used beef broth, and it ended up tasting like a bowl of beer. the ribs were also flavorless. how can anyone say this tasted good whatsoever. please don’t waste your time trying it!
I made this recipe tonight. I did not read the reviews until it was well cooking. Needless to say I was a bit concerned how it would turn out. Well, it turned out fantastic! I think the major factor was that I made a wonderful, velvety gravy with the juices. I omitted the turnip mostly because I did not feel like chopping up hard turnip! I also added about a tbsp of brown sugar after reading that suggestion to add something sweet. I think serving with a gravy made all the difference 🙂
didn’t come out very tasty. I did exactly what it called for. Gave a sour flavor over all.
