Ingredients
- 2 tablespoons olive oil
- 1 small onion, thinly sliced
- 1 clove garlic, thinly sliced
- 1 teaspoon Italian seasoning
- Kosher salt and freshly ground black pepper
- One 14-ounce can diced tomatoes
- 8 ounces large shrimp, peeled and deveined, tails removed
- One 14-ounce can cannellini beans, drained and rinsed
- 2 packed cups baby spinach (about 2 1/2 ounces)
- 1/4 cup crumbled feta cheese
Instructions
- Heat the oil in a large skillet over medium-high heat. Add the onions and cook, stirring occasionally, until softened and just starting to turn brown in some spots, 4 to 5 minutes. Stir in the garlic, Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper, and stir until the garlic is softened, about 1 minute.
- Pour in the tomatoes and bring to a boil. Reduce the heat to medium and simmer, stirring occasionally, until the tomatoes are slightly thickened, 2 to 3 minutes. Add the shrimp and beans and cook, stirring occasionally, until the shrimp just start to turn orange, 2 to 3 minutes. Stir in the spinach and continue cooking, stirring occasionally, until the spinach is just wilted and bright green and the shrimp are cooked through and opaque, 2 to 3 minutes. Remove the skillet from the heat and sprinkle the feta over top. Cover until the cheese is warmed through, 2 to 3 minutes. Serve immediately.

Quick, easy and tasty dish made from pantry staples. I added some crushed red pepper and fresh basil (it’s summer!). Finished with some fresh grated lemon rind and a splash of lemon juice. Absolutely will make again.
Really delicious and easy weeknight with flavor. 5 stars for being delicious and extremely easy with good flavor; it’d be a 4.5 if it took longer. Use the exact amount of premium Italian Seasoning and it comes through; I recommend larger shrimp as there is some cooking time on it, otherwise put shrimp on a bit later.
If you’re into really healthy eating this is the recipe for you! So delicious! I added a big squeeze of lemon juice after the shrimp and some red pepper flakes. My fiancé wanted to lick the plate!
Made this recipe last night, not a lot of flavor. Whole family thought it was just ok. Will possibly make again with the suggestions in other reviews.
Followed recipe as is and it was delicious! Did not use the cheese because we are not fans of feta. Added red pepper flakes to give it a little more zip because it was a little bland. Love the cannellini beans because they make the dish so creamy! Next time will sauté shrimp before adding to skillet. Enjoy!
This is a winner! So quick and tasty. I also used red pepper flakes and a dash of lemon. I think cooked chicken could replace the shrimp. Maybe throw in a nice, greasy sausage, too.

I made it as per the recipe. I did not feel that the flavors were robust. My guests on the other hand absolutely loved it. I sent them the recipe. It certainly LOOKED pretty!
Excellent! As others suggested I added red pepper chili flakes and white wine. Topped with fresh basil. Perfect quick easy weeknight dinner. This one will go in the rotation
