Shrimp Tacos

Ingredients

  1. 2 tablespoons light brown sugar
  2. 1 tablespoon chili powder
  3. 1 teaspoon ground cumin
  4. 1 teaspoon smoked paprika
  5. Finely grated zest from 2 limes
  6. 1/4 cup sour cream
  7. 1 1/2 pounds medium shrimp peeled and deveined, tails removed
  8. 1/4 cup extra-virgin olive oil, plus more, for the grill grates
  9. 4 cups coleslaw mix
  10. Kosher salt and freshly ground black pepper
  11. 12 corn tortillas
  12. Whole cilantro leaves and lime wedges, for serving

Instructions

  1. Preheat an outdoor grill or grill pan over high heat.
  2. Mix the brown sugar, chili, cumin, paprika and lime zest together in a medium bowl. Stir 2 teaspoons of the sugar-spice mixture into the sour cream and set aside. Put the remaining spice mixture in a medium bowl and add the shrimp and olive oil and toss to coat and set aside to marinate for 15 minutes.
  3. Toss the coleslaw mix with the spiced sour cream until well coated and season with salt and pepper. Toast the tortillas on the grill, about 1 minute per side. Transfer to a plate and wrap with foil to keep warm.
  4. Remove the shrimp from the marinade and sprinkle with salt. Lightly oil the grill grates. Grill the shrimp, flipping once, until just cooked through, 2 to 3 minutes per side. Serve the shrimp in the warm tortillas with the slaw, whole cilantro leaves, and lime wedges on the side.

Followed the recipe as written. The shrimp tasted very good with the marinade, but the slaw was very dry and it ruined the taste of the shrimp.

Simple. Really good recipe I chopped my shrimp in 4 pieces added mushrooms, cherry tomatoes and onions to the shrimp while grilling them because I had guest over simply divine .

SUPER YUMMY!!!!     Cooked this on our blackstone griddle!  Tweaked the seasoning to our liking and added cooked onions and avocado.   This is a keeper!!!

This was surprisingly good to me considering the ingredients! My only suggestion would be to make more of the coleslaw sauce and serve it on the side in case anyone would like more. I cut an avocado and served it on the side also. Yummy!!

Super fast & tasty dinner! The lime at the end makes it. Everyone liked it.

Probably would use less sugar next time. The sour cream wasn’t nearly enough for the amount of coleslaw, but that’s an easy fix.

Might would add some pico de gallo or even just diced tomatoes next time, felt like it needed just one more flavor.

This recipe is ridiculously easy and a HUGE hit with everyone. My husband raved that it was “restaurant quality” and I have to agree. I tripled the recipe (I misread the spices and had to triple it to even it out) and cooked down the sauce, which we dipped the shrimp into and spread on the tacos. We will be making this again!
