Paella

Ingredients

  1. Olive oil, for sauteing
  2. 1 onion, finely chopped
  3. 1 tomato, skinned and seeded
  4. 30 mussels, scrubbed and debearded
  5. 12 clams, scrubbed
  6. White wine, to cover
  7. 1/2 chicken, chopped into small pieces
  8. 6 medium squid, chopped into small pieces
  9. 2 bell peppers, chopped into small pieces
  10. Fish stock
  11. Salt and freshly ground black pepper
  12. 3 to 4 strands saffron
  13. 1 pound medium shrimp, shelled and deveined

Instructions

  1. Sweat the onion with in a thin layer of olive oil on low heat for 1 1/2 hours. Add the tomato and simmer for 1 more hour. Let cool and strain. Set aside the onion/tomato mixture.
  2. Open 30 mussels and 12 clams by covering them with white wine. Reserve the wine and juice.
  3. Reserve the olive oil to saute more ingredients. Saute the chicken in olive oil for about 8 minutes. Set aside.
  4. Saute the squid for 5 minutes in olive oil. Set aside.
  5. Saute the peppers for 5 minutes. Set aside.
  6. Add enough water to the reserved mussel and clam juice so it equals 5 1/2 cups. Flavor the fish stock with salt, pepper, and saffron.
  7. Bring to a boil; add 2 cups of rice. Add the Sauteed chicken, squid, peppers, and the onions/tomato mixture.
  8. Bring to a strong boil for 4 minutes. Reduce the heat and add the mussels, clams, and shrimp. Boil moderately for about 10 to 12 minutes. Let sit for about 7 minutes. Then serve.

I was so looking forward to making a good Paella from a renowned chef, BUT when I read the instructions it certainly did not make sense to me. The recipe calls for ONE chopped onion to be sweated in a thin layer of olive oil for 1 1/2 hours on low heat, then add ONE seeded & peeled tomato & saute with said onion for one more hour. That certainly does not seem right to me. Is there an error in the typing or am I incorrect I would appreciate someone at Food Network checking this out Thank you in advance
