Steamed Salmon with Olives and Capers

Ingredients

  1. 2 (6 ounce) fillets salmon
  2. salt and ground black pepper to taste
  3. 1 lemon, juiced, divided
  4. 7 pitted green olives, sliced
  5. 3 tablespoons olive oil, or more to taste
  6. 1 tablespoon capers
  7. 1 teaspoon chopped fresh dill, or to taste

Instructions

  1. Bring 1 to 2 inches of water to a boil in a large saucepan. Season salmon with salt and pepper and sprinkle with 1/2 of the lemon juice; place in a steamer basket. Insert the steamer basket into the saucepan, cover, and steam until salmon is easily flaked with a fork, 7 to 8 minutes.
  2. While salmon cooks, whisk olives, olive oil, capers, and remaining lemon juice together in a bowl. Season with salt.
  3. Place salmon on serving plates, spoon dressing over top, and sprinkle with dill.

I have to admit steaming salmon isn’t my favorite way to prepare it, as it usually lacks flavor, but the olive/caper topping sure made up for it! I used thick center-cut pieces of salmon and 7 minutes was perfect. The briny olive/caper mixture was just wonderful combined with lemon and dill. This will be on repeat in my house!
