Similar to the traditional recipe, this dish for baked shrimp scampi adds a little Dijon for flavor.

Ingredients

  1. 2 pounds medium raw shrimp, shelled, deveined, with tails attached
  2. 1 cup butter
  3. 2 tablespoons Dijon mustard
  4. 1 tablespoon fresh lemon juice
  5. 1 tablespoon chopped garlic
  6. 1 tablespoon chopped fresh parsley

Instructions

  1. Gather all ingredients.Preheat oven to 450 degrees F (230 degrees C)

  3. In a small saucepan over medium heat, combine the butter, mustard, lemon juice, garlic, and parsley. When the butter melts completely, remove from heat.

  5. Arrange shrimp in a shallow baking dish. Pour the butter mixture over the shrimp.

  7. Bake in preheated oven for 12 to 15 minutes or until the shrimp are pink and opaque.

Made this recipe to the letter and it was perfect for us. One question tho: what is the point of leaving tails on? I usually only leave tails on if grilling.

This is a really good base to start with. I say that because I added to it. I forgot the Dijon mustard by accident. So I just made it my own way. I didn’t bake it either.

Made this tonight and loved it! I cooked for 1 with a 12 oz. pkg. of frozen shrimp. Thawed, peeled, and cooked for 6 minutes in oven. Cut the butter to one stick, 2 cloves of garlic, a generous tbsp. of Dijon, splash of vermouth, and heaping tsp of dried parsley. The mustard acted as an emulsifier. Next time I will add the pasta to the butter mixture and toss the shrimp in for 5-6 minutes . Shrimp and butter mixture was in the oven for about 6 minutes. When added to the hot pasta it was a little overdone. Not rubbery, but close. Thanks so much for the recipe! Will be making this often!

I tried this recipe this evening following the ingredients as listed except I used only 1/2 of the recipe as I was dining alone. It was very good and will make again. The only thing I did differently was to add some grated Parm cheese to the finished dish. Made some garlic bread to dip up some of the sauce.

This recipe was absolutely delicious served over buttered linguini. Note that if you like a lot of sauce, cutting the butter in half without making up for it with at least another half cup of liquid, might not work well, especially if you have leftovers like we did. I’m going to reheat mine with a cup of chicken broth and a few seasonings, to cut back on the fat. But, the sauce is great as is, just not enough of it if you cut back on the butter and have leftovers.

Made this recipe tonight and rocked it! I added more garlic because … you know garlic and used less butter and instead of dijon mustard I used a little yellow mustard and not a lot of it. I also squeezed a lil more lemon in it before putting in the oven made a little bit of thin spaghetti, some mixed vegetables ( broccoli for my other half) a Cesar salad w/ cherry tomatoes and some crusty bread w/ butter . There were two of us eating… We have enough left overs for lunch tomorrow for the two of us. Thank you to the poster for sharing this recipe. Its great for a quick weeknight meal thats quick and easy to make and is versatile to everyone.

This is an excellent recipe that I have been making for years! It Once you put it in the oven, it gives you a few minutes to make a salad, set the table or whatever. I cut the recipe in half if it’s only the two of us. The only change I make is to sometimes add just a splash of white wine to elevate the taste a bit.

I cut the mustard to 1 tablespoon and melted the butter, mustard, lemon juice, garlic and parsley in a large braiser on the stove top. Then I folded in the prepared shrimp to the butter mixture and baked as directed. It was delicious and I only used 1 pan. Definitely will make this again.
