Lunch or dinner can be served quickly and deliciously with this salmon and tomato dish. Eat it straight off your dish or serve it over rice, spaghetti, or polenta. You’ll want to lick the plate clean it’s that wonderful!

Ingredients

  1. 2 cups water
  2. 1 cup uncooked long grain white rice
  3. 2 ½ tablespoons garlic oil
  4. 2 (6 ounce) fillets salmon
  5. ½ teaspoon dried dill weed
  6. ¼ teaspoon paprika, or to taste
  7. salt and pepper to taste
  8. 2 fresh tomatoes, diced
  9. 1 ½ teaspoons minced garlic
  10. 1 teaspoon lemon juice
  11. ¼ cup grated Parmesan cheese
  12. 3 tablespoons chopped fresh parsley
  13. 2 tablespoons butter
  14. 4 dashes hot pepper sauce

Instructions

  1. In a medium saucepan, bring water and rice to a boil. Reduce heat to low, cover, and cook for 20 minutes.
  2. Meanwhile, heat garlic oil in a skillet over medium heat. Season salmon with dill, paprika, salt, and pepper. Cook salmon in hot oil for 1 to 2 minutes on each side, until tender enough to break apart. Break salmon into cubes with a spatula or fork. Mix in tomatoes, garlic, and lemon juice. Continue cooking until salmon is easily flaked with a fork.
  3. Mix Parmesan cheese, parsley, butter, and hot pepper sauce into the skillet; continue cooking for 1 to 2 minutes, until well mixed. Serve over cooked rice.

Neither my husband nor I are wild about salmon but are making a concerted effort to eat more of it. This dish was a winner. My husband pronounced it “a good use of salmon” and said we should eat it once a month which is effusive praise for anything involving salmon. I affirmatively liked it — also high praise. I served it over polenta with a bit of parmesan mixed into the polenta. I used olive oil instead of garlic oil. I used two fist-sized Roma tomatoes. Two thumbs up.

Excellent. I tasted the sauce/dish before I changed things and it was delicious. I also didn’t have garlic oil so added extra while initially cooking the salmon. But I also added wine and butter as suggested near the end of cooking. I didn’t have hot sauce so added some red pepper flakes. I licked the plate. I think the wine and butter caused the plate licking, but it was delicious before that.

This was so good. Thank you so much to all the reviewers because that is what made me want to make it. I didn’t have the garlic oil but looked it up and smashed a garlic clove and marinated it in the olive oil and then discarded the clove after 10 minutes. not sure if that is garlic oil but tasted amazing. Didn’t use more than 2 dashes of hot sauce as I was worried it would overpower. I did cut the salmon into cubes like it said, just excellent. Served with rice and a bed of spinach. Super fast recipe. Thank you so much!

I used olive oil instead of garlic oil since that’s all I had on hand, otherwise followed the recipe ingredients. I had 3 hungry eaters so I made 3 fillets and added more of each ingredient accordingly. So delicious. Everyone loved it!!

Wonderful combination of spices. Tomatoes taste fresh and, as another reviewer stated, do not overwhelm the dish. Consider making the sauce in a skillet and then baking salmon in the oven, topped with the sauce.

All the stars! I wanted try something a little different with salmon and this fit the bill. I followed the recipe, but tossed in some fresh baby spinach at the end for color. Plus the spinach made it a complete meal in one bowl. Everyone enjoyed it and my growing adolescent had two helpings.

This was fabulous! I made minimal simple changes…per a review (to marinate in soy sauce) I marinated the salmon in a mixture of tamari (50% less sodium) with the dill and paprika for an hour or so. I heated the garlic oil and sautéed red onion before adding the salmon…. I wondered about leaving the skins on but I love the skins and they blended in well. At this point I added cayenne because I ran out of hot sauce (who knew!) I used a can of fire roasted tomato with garlic including juices (because reviews suggested more of a sauce) with the lemon juice. I used fresh parsley and real parm. I served over orzo and the BF and I just loved it! Wow! Thank you for sharing!

So so so yummy!!! I was amazed at just how delicious this was. It was so easy to make! The salmon filet I used had its skin on and gave it a little more of a fishy taste than I like so I’ll use skinless next time. But I will be making it again and again. This is my favorite way to eat salmon

I kept the salmon whole and put the tomatoes in a separate pan. Then split the butter, parsley, and and parmesan cheese between the tomato pan and the salmon pan. Topped the rice with the tomatoes and placed the salmon on top! It was soooo delicious! Definitely added to my favorites to make again!

Set in oven to keep warm. Cooked garlic in butter, then added diced tomatoes, lemon juice, hot sauce, and parmesan cheese for few minutes. Served tomato mix over salmon. gave 5 stars for the combination of flavors but 3 stars for recipe directions. averaged 4.

Made it as directed but without the dill (didn’t have it) and it was OUTSTANDING! Fresh, healthy, but rich tasting from the little bit of butter and the cheese. I will be making this a lot.
