Salmon Stuffed with Crab and Lobster

Make a fantastic football snack out of leftovers from Thanksgiving!

Ingredients

  1. cooking spray
  2. 2 small lemons
  3. 1 tablespoon salted butter
  4. ½ medium onion, diced
  5. 2 cloves garlic, diced
  6. ½ pound crabmeat, coarsely chopped
  7. ½ pound lobster meat, chopped
  8. 6 ounces goat cheese, crumbled
  9. 2 (8 ounce) salmon fillets
  10. 2 tablespoons barbecue sauce, or to taste
  11. salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray. Slice one lemon and juice the second lemon; set aside.
  2. Melt butter in a medium skillet over medium heat. Add onion and garlic; saute until golden brown 7 to 8 minutes. Remove from the heat.
  3. Chop crab and lobster in a food processor. Transfer into a bowl and mix in onion mixture, goat cheese, and lemon juice.
  4. Cut each salmon piece in half. Fold crab and lobster stuffing into each piece and tie closed with kitchen string. Place in the prepared baking dish. Place lemon slices on top of salmon and cover with barbecue sauce.
  5. Cover the baking dish and bake in the preheated oven for 45 minutes. Uncover and bake until fish flakes easily with a fork, about 15 more minutes.

My family really enjoyed this recipe. I’ve never stuffed ANYTHING before and was happy that the crab and lobster filling didn’t burst through the salmon fillets and spill over while baking. I did accidentally tweak the recipe because I forgot to add the sautéed onions and garlic in the butter sauce to the crab and lobster. I did find that it’s actually not needed to still have a nice flavor. In addition, the salmon was baked for about 20 minutes vs the 45 minutes the recipe suggests. I also did not add barbecue sauce because it also wasn’t needed. Other than that, the recipe was great and I’m going to make it again.

When you have expensive ingredients you definitely don’t want to spoil them! I know our taste buds react differently and even if someone can like the goat cheese in this recipe, I do not recommend it! The sweeter taste of crab and melty fatty salmon unexpectedly got the taste of stale fish with the sour overwhelming smell of goat cheese. Next time I’m gonna try swiss or gruyere cheese to kick the taste of crab and lobster! I cooked it for 20 min!
