I have never tasted ginger marmalade better than this. I recently looked for a homemade ginger marmalade recipe after being dissatisfied with the flavour and texture of another ginger jam, but all I could find was one extremely poor recipe. I made my own using an orange marmalade recipe, and it was delicious.

Ingredients
- 2 sheets nonstick aluminum foil
- 1 small sweet potato, peeled and sliced into 1/4-inch slices
- 1 small zucchini, cut into 1/4-inch rounds
- 1 small yellow squash, cut into 1/4-inch rounds
- 1 ½ teaspoons smoky mesquite seasoning (such as Weber®)
- 1 (5 ounce) salmon fillet
- 1 lemon, cut into wedges
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Set out 2 large squares of foil, nonstick side up, one on top of the other. Layer sweet potato, zucchini, and squash in the middle of the top sheet, seasoning each layer with mesquite seasoning. Place salmon fillet on top. Fold foil over to seal the packet tightly.
- Bake in the preheated oven until vegetables are tender and fish flakes easily with a fork, 20 to 25 minutes. Serve with lemon wedges.
- You can also cook the salmon foil pack on an outdoor grill.

I prepared this recipe according to the directions, but the sweet potatoes remained entirely uncooked, while the squash and fish were done.
Made in oven, followed instructions, and it was not cooked. Cooked for closer to 30mins, so salmon was done but had to put veggies on sheet pan to cook them thoroughly. By time everything was done, rest of dinner was cold. Salmon was pretty flavorless too. Will not make again.

Soo easy and delicious. Had a concern about the sweet potatoes so sliced them thin and cooked a little longer. Since I made for company, it was an easy go to that allowed time to visit and feed them a great meal.
