Use this extremely old but good recipe to produce a delightful honey-mustard dressing. It can be used as a salad dressing or a dip.

Ingredients
- ¼ cup crushed pistachios
- 2 tablespoons panko bread crumbs
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon butter, melted
- 4 (6 ounce) fillets salmon with skin, center cut
- salt and ground black pepper to taste
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 4 lemon wedges
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Combine pistachios, bread crumbs, Parmesan cheese, and butter in a small bowl; stir with a fork until evenly combined.
- Lightly season salmon fillets with salt and pepper on both sides.
- Heat olive oil in a large oven-safe skillet over medium heat. Sear salmon fillets, flesh-side down, for 2 to 3 minutes. Turn heat off and flip salmon pieces over so skin side is down.
- Brush tops of salmon evenly with Dijon mustard. Top with pistachio mixture, pressing mixture down onto salmon.
- Bake in the preheated oven until salmon flakes easily with a fork, 10 to 12 minutes. Serve with lemon wedges.
- Salmon fillets that are 1- to 1 1/4-inch thick work best.
- Use a mini food processor to chop pistachios quickly; alternately, you can use a resealable plastic bag and a meat mallet to crush the nuts.

I followed the recipe exactly and it’s delicious! My husband, who doesn’t get terribly excited about food, kept saying how good it was. My kids who don’t like fish loved it too… in fact one of my sons won’t touch fish, but gobbled this up. I used gluten free panko, as hubby has celiac disease. I tossed asparagus & broccoli in a little olive oil & salt and roasted them along with the fish and served with garlic mashed potatoes.
The Dijon under payment sparked the nice cheese crunch knees to sweetly cause a seafood smorgasbord in my mouth. Quite a master’s delight!
I rate this as FANTASTIC. I used (2) 8 oz. Pacific Salmon and deleted the dijon mustard that I figured would hide the salmon flavor. I did not sear the salmon, but air fried skin down on foil lined pan, so skin stuck to foil when I served. So moist and so flavorful. The pistachios really made the dish.
Excellent Recipe. My husband doesn’t like salmon very much but he said this was very good. I have made pistachio crusted trout but this recipe was better, I liked the panko crumbs and parmesan cheese. Thank you .
One of our favorite salmon recipes because it is quick, easy and very flavorful. I use my cast iron skillet which can go into the oven and it turns out great every time.

Made no changes. Absolutely delicious! Good way to use up some pistachios we had. Served on a bed of cilantro rice and buttered veggies. It was a hit! Not hard to make it all and can definitely do this on a weeknight!

Easy one pan recipe! I used an iron skillet, it went straight from the stove top to the oven and it turned out wonderful! Nothing but compliments from the family!! Delicious!
I followed the recipe BUT cooked it in the air fryer. Sprayed inside with oil first and then some on top. Made the topping nice and crispy.
This was delicious!!! One of the best salmon recipes I’ve ever had. The only change I made was add an equal amount of Mayo to the mustard (my husband isn’t crazy about mustard, so I diluted it a bit). Otherwise I followed the recipe exactly. Superb!!!

Great recipe. All the directions were great except step 3. Next time, I’ll add a lot more salt and pepper in step 3 where it says “lightly season both sides with salt and pepper”. It needs a little more seasoning. I’ll probably baste a little more Dijon as well. Simple and delicious! Thank you for the recipe!
