Ingredients
- ½ cup olive oil
- ¼ cup balsamic vinegar
- 4 cloves garlic, pressed
- 4 (4 ounce) fillets salmon
- 1 ½ teaspoons garlic salt
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped fresh basil
Instructions
- Mix oil and vinegar together in a small bowl.
- Arrange salmon fillets in a shallow baking dish. Rub garlic over salmon, then pour oil and vinegar mixture over top, turning once to coat. Season with garlic salt, then scatter cilantro and basil over top. Let sit for 10 minutes.
- Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
- Remove salmon from marinade and shake off excess. Discard all but a few tablespoons remaining marinade.
- Broil salmon in the preheated oven, turning once and brushing occasionally with reserved marinade up until the last 4 minutes, until fish is browned on both sides and flakes easily with a fork, 10 to 12 minutes.

Delicious!! I used the marinade on both salmon and Chicken, Added a tsp of Zatar seasoning. Used blueberry balsamic as I ran out of unflavored balsamic. Tasted great.
The fresh herbs make all the difference! Such an easy and delicious recipe. I did bake my salmon at 425 degrees instead of broiling as I had a vegetable roasting.

It was excellent and easy to make. Everybody wanted seconds and was surprised that there was no bad aftertaste later that you find with some fish. I did make a Spanish rice as a side dish with cilantro to go with this. I will be making this again soon. I did use a aged balsamic vinegar with this dish.
Wow, this recipe was such a highlight at an event. I needed a fish recipe to an event I was attending for 20 ppl that don’t eat chicken so I found this. I have to say that I used 4lbs of salmon (2 big fillets) and used the amount of olive and balsamic vinegar in the recipe. Suggestions if the salmon is about 2lbs use half of what is suggested in the recipe. Since oil and vinegar separate, I used a sifter when adding it to the fish so it blended together. I also have fresh mint so added that too (not too much since mint has a dominate flavor). I let the fish marinate about 2 hours before adding it in the oven (30 minutes should be fine) The guests were raving about how delicious this was. I will definitely make this again.

I also used rosemary instead of cilantro, since I don’t like cilantro. Rubbed the salmon with the garlic, added garlic powder also, added the rest of the ingredients recipe called for. I had no garlic salt, so I was going to add regular salt instead, but I forgot, so I added the salt when eating it. We liked it, but couldn’t taste the garlic, maybe cause I didn’t add salt when baking it, at 400F. Next time I’ll make it, I’m adding the salt!
I too reduced the olive oil a little (1/3 cup instead of 1/2) and it was just right. It was tasty, but I think next time I’ll pan fry it and the salmon might not dry out so much.

I made it without basil, we did not have any but it turned out pretty good, ours had the skin on the one side, it took about 25 minutes to cook, it might be different for your oven though. Overall it was a good change-up to our regular cooked salmon.
I grilled it but the marinade was DELICIOUS. My family typically sticks to our tried and true soy marinade but I’m so glad I tried this! We had it with a mediterranean orzo salad and it was perfect.
I have not made this recipe yet, but why in the world would you combine cilantro and basil? One is classically Latin and the other classically Italian. You need to pick a culinary lane here. If you’re going to call it “Mediterranean” then stick with Italian.

Great guide. Changed broil to bake 375° seven minutes. Ingredients are so different and delicious.
I used Lake Trout instead of Salmon. No leftovers!

Replaced the cilantro with parsley and did not use as much Olive oil
