Lemon Panko-Crusted Salmon

I adore serving this panko salmon with mashed potatoes flavored with garlic and feta as well as glazed baby carrots on the side. It is a fast, nutritious supper that will sate your appetite.

Ingredients

  1. 6 tablespoons panko bread crumbs
  2. 1 tablespoon grated Parmesan cheese
  3. ½ teaspoon lemon-pepper seasoning
  4. ½ teaspoon dried thyme
  5. ½ teaspoon dried parsley
  6. ⅛ teaspoon granulated garlic
  7. ⅛ teaspoon lemon zest
  8. 2 (4 ounce) salmon fillets
  9. 1 tablespoon butter, melted

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  2. Combine panko, Parmesan, lemon-pepper seasoning, thyme, parsley, garlic, and lemon zest in a bowl.
  3. Place salmon onto the prepared baking sheet. Brush melted butter over top, then sprinkle with panko mixture.
  4. Bake in the preheated oven until fish flakes easily with a fork, 20 to 25 minutes.
  5. Margarine is not recommended for this recipe.

I used a tsp of herbes de province instead of thyme and parsley. I didn’t use all the coating and I think it could use just a little more butter or a little olive oil in the coating. Took about 10 mins to cook.

Do not double the ingredients for the bread crumb mixture. I did because usually recipes are off, but this one is spot on for 2 salmon fillets. I also squeezed a little fresh lemon juice into the bread crumb mixture to give it an extra lemony kick and it was delicious!

I made this for the family tonight. Delish. Easy and fast. Even kids liked it. I think for those that have trouble with flavor on salmon dishes need to consider the quality of the salmon they are using. Ours was fresh caught, wild. Every bit of it was moist and flavorful. We added fresh lemon zest instead of dried and also a bit of salt. A great topping. Will make this again!

It had way too much bread crumb topping, had a “powder” consistency on top and no flavor. The small amount of topping that was able to absorb the juices from the salmon had a mushy texture.I had to scrape the topping off. Luckily, I had a marinade to dunk it in to add some flavor and salvage the dinner. I would give it a zero if I could.
