Instant Pot® Honey-Mustard Salmon from Frozen

Although frozen salmon fillets are quite affordable, I frequently forget to defrost them. For a flawlessly cooked fillet in only a few minutes, this recipe instructs you to place frozen salmon fillets right into your Instant Pot®. Just two minutes are used to finish the salmon under the broiler with a honey-mustard coating. Delicious!

Ingredients

  1. 2 (6 ounce) fillets frozen salmon fillets
  2. salt and ground black pepper to taste
  3. 1 cup water, or as needed
  4. 1 tablespoon honey
  5. 1 tablespoon whole-grain mustard
  6. 2 teaspoons olive oil

Instructions

  1. Season frozen salmon fillets with salt and pepper. Place a trivet inside a multi-functional pressure cooker (such as Instant Pot®) and pour in 1 cup of water, ensuring the water does not cover the trivet. Place fillets skin-side down on the trivet in a single layer.
  2. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure carefully using the quick-release method according to manufacturer’s instructions immediately after cooking time is over, about 5 minutes.
  4. Meanwhile, mix together honey, mustard, and olive oil in a small bowl.
  5. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler to high. Line a baking sheet with parchment paper.
  6. Unlock and remove the Instant Pot® lid. Carefully transfer cooked fillets onto the prepared baking sheet, skin-side down. Spread 1/2 of the honey-mustard glaze over each fillet.
  7. Broil salmon fillets for 2 minutes. Serve immediately.
  8. If you want to skip the broiling step, simply serve the glaze over the salmon directly from the pressure cooker. It’s just as delicious!

This was so good we both loved it. Bonus that it is made from frozen as we so often forget to take something out of the freezer for dinner. The only thing I did different was to use dijon mustard instead of whole grain because we didn’t have any. We coated the fish with the topping and put it under the broiler. Mmmm. More please.
