Curry Salmon with Mango

This excellent roast produces an amazing sauce that may be drizzled on top of the meat. Add additional cayenne if you prefer it hotter.

Ingredients

  1. 1 (1 pound) fillet salmon fillet
  2. ¼ cup avocado oil
  3. 1 teaspoon curry powder
  4. salt to taste
  5. 1 mango – peeled, seeded, and diced
  6. ¼ cup diced red onion
  7. 1 small serrano pepper, diced
  8. 1 small bunch cilantro leaves
  9. 1 lime

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  2. Place salmon on the baking sheet and fold edges of aluminum foil up over the salmon and crimp to seal.
  3. Bake in the preheated oven until cooked through and flesh flakes easily with a fork, about 15 minutes.
  4. Mix avocado oil, curry powder, and salt together in a small bowl. Pour over salmon. Scatter diced mango, red onion, and serrano pepper over salmon. Serve garnished with cilantro and a squeeze of lime.
  5. Substitute olive oil for the avocado oil if preferred.

Fantastic flavor! My pieces of salmon were pretty thick and 15 mins was a bit much, so next time I’d do 12-13mins. That said, I prefer the flavor of grilled salmon, so I might even do that instead of baking. Some recommendations: 1) season the salmon first before cooking. The salmon itself was a little on the bland side. I’d suggest in the very least, salt, pepper and garlic powder. 2)Mix the mango, onion, serrano, cilantro and lime juice together in a bowl and let it sit while the salmon cooks, instead of sprinkling each individual ingredient on the fish. I’ll be making this one again with the tweaks I suggested. Yummy!
