Cedar Plank-Grilled Salmon

In the UK, mince pies are a staple of the holiday season. This recipe for little mince pies was introduced to me by my brother, and I just adore it, so I’ve decided to share it with you.

Ingredients

  1. 2 tablespoons brown sugar
  2. 1 tablespoon chili powder
  3. 1 teaspoon ground cumin
  4. ⅛ teaspoon kosher salt
  5. ⅛ teaspoon ground black pepper
  6. 6 (6 ounce) skin-on salmon fillets
  7. 2 cedar planks, 7×12 inch, soaked in water for 1 hour

Instructions

  1. Combine brown sugar, chili powder, cumin, salt, and pepper in a bowl. Sprinkle over fillets. Arrange fillets 1 inch apart on soaked cedar planks.
  2. Preheat an outdoor grill for medium heat and lightly oil the grate. Place planks over the cooler section of the center of the grill, turning the thickest sections of fillets closest to the fire.
  3. Cover and cook until an instant-read thermometer inserted into thickest parts of fillets reaches 135 degrees F (57 degrees C), 30 to 35 minutes.
  4. Remove planks from grill. Let salmon rest on planks 5 to 10 minutes.

I looks beautiful with the caramelized sugar, but for my tastiest was too sweet and the sweetness didn’t compliment the salmon. My husband liked it though.

Substituted the kosher salt with garlic salt. Grilled over indirect heat at about 500F. Turn out super moist and melt in your mouth tender.

So easy and so delicious!! Did it on a cedar plank that had soaked in water for about 3 hours. I really recommend this recipe to novice fish preparers! Enjoy!
