It’s obvious from the title, yes! By accident, this recipe was developed. I made the error of using cocktail sauce rather than chili sauce when following another recipe as a guide. I must say, this was the best mistake I’ve ever done. The most amazing zip could be felt in these pork chops! There ought to be more errors like this!

Ingredients
- 2 tablespoons ground paprika
- 1 tablespoon ground cayenne pepper
- 1 tablespoon onion powder
- 2 teaspoons salt
- ½ teaspoon ground white pepper
- ½ teaspoon ground black pepper
- ¼ teaspoon dried thyme
- ¼ teaspoon dried basil
- ¼ teaspoon dried oregano
- 4 salmon fillets, skin and bones removed
- ½ cup unsalted butter, melted
Instructions
- Mix paprika, cayenne pepper, onion powder, salt, white and black pepper, thyme, basil, and oregano together in a small bowl.
- Brush salmon fillets on both sides with 1/4 cup butter, and sprinkle evenly with the spice mixture.
- Heat 2 tablespoons melted butter in a large, heavy skillet over high heat. Add salmon and cook until blackened, 2 to 5 minutes. Lift fillets, add remaining melted butter to the skillet, and flip fillets into the butter. Cook until the other side is blackened and fish flakes easily with a fork, 3 to 5 minutes.

I read some of the comments and some said too red hot. I only had 4 medium/small filets and 2 Tbsp of cayenne pepper seemed a lot. So I toned it way down to our tastes (about 1/2Tbsp). But added more black pepper and less salt! Also a heaping tsp of brown sugar to really blacken. Followed the rest as written. Excellent. Will make again! Would have given a 5 but for the cayenne and the other helpful hints were truly needed for success. Thanks Nikki Fillipone for sharing.

We loved this! We have salmon twice a week so new recipes are always welcome and this was one of them. Very spicy but we like it that way! We’ll do this one again for sure.

Absolutely delicious! I added garlic and 1 tsp of salt to the seasonings and only used half of the butter called for as I had 3 pieces of salmon instead of four, and had seasoning left over. I served it with jasmine rice with parsley and sauteed peppers and onions. It was awesome!
Good recipe. But too salty. I cut the salt almost in half, and it was still salty. I may have been a little heavy on the rub. I also cut down the cayenne. We will be making this again.

I made this with cod and my family really liked it. I pan fried it for about 2 mins /side (each piece was about 3 inches long). It was too spicy for us and I only used 1/2 of the cayenne pepper. I think next time I will reduce the black pepper as well. Otherwise it was delicious!

Excellent flavor!! Might use a little less cayenne pepper next time for my husband, but this dish is definitely a keeper!! Served with sautéed fresh green beans, both taking the same amount of time to cook. Yummy!!
Great. I use 1/2 olive oil 1/2 butter. Slip season solode down on cast iron grill heated as high as you can on the bbq. Then season top before closing grill. Flip after 2 minutes and grill other side foe 2 minutes.

This was excellent–my mom called it “the best salmon ever!” I changed very little, other than to use 1 tsp cayenne pepper instead of 1 TBSP and since I’ve had bad luck trying to sear anything in butter I just seared one side in olive oil and then stuck it skin side up under the broiler. It turned out great, although I might add more cayenne pepper!
Outstanding recipe! I cooked it in my cast iron skillet and did not get it blackened as i hoped but it was delicious! I baked the red potatoes with olive oil and Weber’s garlic/parmesan seasoning, and added broccoli with a dash of cheese!!!
