Tuna Melts on English Muffins

Family members love this stew meat-based beef stroganoff recipe. When poured over egg noodles, the sauce is delicious and quite rich and creamy. Although it takes a little longer to create, it is totally worth it!

Ingredients

  1. ¼ stick butter
  2. 1 small onion, finely diced
  3. ¼ teaspoon minced garlic
  4. ½ teaspoon seafood seasoning (such as Old Bay®)
  5. ½ teaspoon chopped fresh cilantro
  6. ¼ teaspoon onion powder
  7. ¼ teaspoon sea salt
  8. ¼ teaspoon ground black pepper
  9. 2 (5 ounce) cans albacore tuna packed in water, drained
  10. ½ cup mayonnaise
  11. 3 English muffins, split
  12. 1 large vine-ripened tomato, cut into 6 slices
  13. 6 slices American cheese

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C).
  2. Melt butter in a small frying pan over low heat. Add onion and garlic and saute over low heat until soft and translucent, 5 to 7 minutes. Stir in seafood seasoning, cilantro, onion powder, salt, and pepper. Remove from heat.
  3. Combine tuna and mayonnaise in a bowl. Add the sauteed mixture from the frying pan and blend well with a fork.
  4. Place all 6 halved English muffins on a cookie sheet. Spoon on tuna mixture, dividing it evenly between each muffin. Top each with a slice of tomato; add a slice of American cheese.
  5. Bake in the preheated oven until cheese is melted, about 5 minutes.
  6. If you are not a fan of English muffins, try bagels or any thick-sliced bread such as an Italian or French baguette.
  7. Use your favorite cheese–I like American or provolone.

I didn’t know tuna could taste this good.

Loved this and I’m not even a huge fan of tuna. The flavor was excellent and these were simple. My only complaint was in the English muffins. They really need toasted prior to adding the tuna mixture. Easy fix.
