Sheet Pan Cajun Butter Shrimp

Despite how affordable frozen salmon fillets are, I frequently forget to defrost them. In order to quickly and perfectly cook salmon fillets, this recipe instructs you to place frozen salmon fillets into your Instant Pot®. I add a honey-mustard glaze to the salmon before finishing it under the broiler for about two minutes. Delicious!

Ingredients

  1. 1 teaspoon smoked paprika
  2. ½ teaspoon garlic powder
  3. ½ teaspoon onion powder
  4. ½ teaspoon salt
  5. ½ teaspoon dried oregano
  6. ¼ teaspoon freshly ground black pepper
  7. ¼ teaspoon cayenne pepper
  8. ¼ teaspoon dried thyme
  9. 2 pounds extra large shrimp, peeled and deveined
  10. 2 tablespoons olive oil
  11. ½ cup butter, cubed and at room temperature
  12. 2 tablespoons minced fresh parsley (Optional)
  13. 6 lemon wedges (optional)

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Combine smoked paprika, garlic powder, onion powder, salt, oregano, pepper, cayenne pepper, and thyme in a small bowl. Pat shrimp dry and place in a large bowl. Sprinkle with Cajun seasoning mixture and drizzle with olive oil. Toss to coat evenly.
  3. Place shrimp in a single layer on a sheet pan without overcrowding.
  4. Cook in the preheated oven until shrimp are opaque in the middle, about 8 minutes. Immediately add butter to the hot pan and toss with shrimp until butter is melted. Sprinkle with parsley, if desired and serve with lemon wedges.
