Salmon Loaf with Roasted Red Peppers

Ingredients

  1. 1 small onion, chopped
  2. ½ cup roasted red peppers, drained and chopped
  3. 1 (14.5 ounce) can red salmon, drained and flaked
  4. 24 saltine crackers, crushed
  5. ½ cup milk
  6. 1 egg, beaten
  7. ¾ teaspoon Worcestershire sauce
  8. 3 drops cayenne pepper sauce (such as Frank’s® RedHot®)
  9. ⅛ teaspoon cayenne pepper
  10. black pepper to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  2. Blend onion and roasted red pepper in a blender until liquefied; transfer to a large bowl.
  3. Mix salmon, saltine crackers, milk, egg, Worcestershire sauce, cayenne pepper sauce, cayenne pepper, and black pepper with the onion mixture in the large bowl; transfer to the prepared loaf pan.
  4. Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 45 minutes.

Used this recipe to make salmon loaf from leftover poached salmon. I added extra tobacco sauce and was generous with the cayenne pepper. It was moist and very tasty. I would make it again!

I also used cupcake pan instead of loaf and it turned out great! Made 6 delicious cakes and ate with dill sauce. I will definitely make this again and highly recommend this recipe.

I must admit I didn’t follow the recipe exactly, because I needed to use up some leftover fresh salmon that I cooked last night, so didn’t use canned salmon. I adjusted the quantities to suit the amount of salmon I had, and thought it was delicious! The peppers and seasonings add nice flavor that I haven’t found in other salmon patty or salmon loaf recipes, but do not overwhelm the delicious flavor of the salmon. Instead of making a loaf, I used cupcake tins. Next time I may increase the oven temp, because I had to add time for it to be done. We added some tzatziki dip and/or a little jalapeno Greek yogurt dip (from Costco) on the side, and it was yummy. Thanks for sharing!
