Ingredients
- 1 pound flounder fillets
- ½ teaspoon salt
- ground black pepper to taste
- 1 tablespoon lemon juice
- 2 teaspoons melted butter
- 1 teaspoon minced onion
Instructions
- Preheat the oven to 400 degrees F (200 degrees C).
- Place flounder in a baking dish; season with salt and pepper. Mix together lemon juice, melted butter, and onion in a small bowl; pour over flounder.
- Bake in the preheated oven until fish is opaque and flakes easily with a fork, 25 to 30 minutes.
- You can use any white fish instead of flounder.

This recipe was the root inspiration for my favorite fish dish. Initially, I made it with both fresh and frozen mahi. The recipe evolved into my go-to version baked in individual small gratin dishes, with freshly ground pepper, and a generous pinch of freshly minced garlic in the olive oil (no butter). Cook in two stages: 7 minutes at preheated 400 degrees, then increase the heat for 7 minutes at 500. This puts a bit of crispiness at the edges but stays moist in the center. Finish with a squeeze of lemon. This works with any fish fillet of uniform thickness, about 3/4″. The individual servings can be set up in advance, refrigerated, and cooked separately in a fast-moving household.

Very nice and definitely “quick & easy” to prepare. Had to use onion powder but otherwise followed the recipe and it was a hit with the family. Pleasant, mild seasoning so folks leery of fish recipes should give this one a go. Baking time was consistent with what the recipe says too.
As promised, this was quick and easy, and also it was good. The butter and lemon give just enough flavor to brighten things up without overpowering the delicate flavor of the flounder. I didn’t keep the recipe in front of my while I was preparing it, so I forgot the minced onion. Still having a sense that I was missing something, I used a bit of basil. This worked. My fillets were pretty thin, so they only took 10 minutes at 375F.

This was so simple to make. The flavors did not overwhelm the delicate taste of the flounder. This will be a regular go-to for a simple meal. I paired it with roasted cherry tomatoes. Like another reviewer, I used two tablespoons of butter rather than two teaspoons. Enjoy!!

This was delicious! Made it with frozen fish fillets and the family loved it. I found that I needed a little more of the butter/lemon juice/onion mixture for the fish I had, and I added a bit of rosemary as well. Served with jasmine rice and peas, just perfect! I’ll definitely make this again, thanks so much for this recipe!

I make this all the time and use fish that’s on sale or I have on hand but I like the tilapia the most .
My husband and I both like fish and I found this recipe. I had cod so used that. I turned the skinny end under so it would not overcook. Made no other changes. It was done in 25 minutes as suggested and was delicious. I will try this simple method with other local white fishes.
Easy to make – 5 stars in this area. My family enjoyed it but thought it was a little plain. My “non fish eating” 12 year old did enjoy it dipped in soy sauce. Will make it again but will probably add a little Old Bay seasoning.
Very tasty and super simple. I made the flounder exactly like the recipe except I used two tablespoons of butter instead of two teaspoons. I also cooked it for 30 minutes because I prefer my fish a little on the dry side. It came out excellent. My husband who is not a big fan of flounder actually enjoyed it!
