Pecan-Crusted Rockfish with Old Bay

Even if your rockfish is frozen, if you have some other common items on hand and some rockfish, you may have dinner in less than 30 minutes. It is additionally easily adjustable.

Ingredients

  1. 1 serving cooking spray
  2. 2 tablespoons melted butter
  3. 2 pounds frozen rockfish
  4. 1 cup finely chopped pecans
  5. 1 cup panko bread crumbs
  6. 2 teaspoons seafood seasoning (such as Old Bay®)

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with foil or parchment paper. Spray with cooking spray.
  2. Pour melted butter over rockfish. Combine pecans, panko, and seafood seasoning in a bowl. Evenly distribute mixture over the fillets, pressing gently into the top.
  3. Bake in the preheated oven until fish easily flakes with a fork, about 20 minutes. Set an oven rack about 6 inches from the heat source and turn on the oven’s broiler. Broil for 1 to 2 minutes, making sure not to burn the crust. Serve immediately.

This recipe made a not-so-delicious fish a lovely main dish! I only had walnuts and used them instead and it was still lovely.

Super easy and very tasty! I used 2 different types of baking dishes. One was white ceramic and one clear glass, in a gas oven. Not sure why as everything else was equal, however the white ceramic dish was more flaky and tasted better than the clear glass…may have been that I used wax paper on the clear glass one and didn’t for the ceramic…? Anyway, all very good overall and baking time was spot on! Thank you!
