This dish is a really good spicy variation on a traditional corn dip, both in terms of spice and warmth. It is the culmination of a number of modifications and is my version 7, so it is open to your imagination. Try out several types of corn, peppers, cheeses, etc. Serve with tortilla chips, either white or yellow. Wish you would like it.

Ingredients

  1. ¼ cup butter
  2. 1 ½ teaspoons minced garlic
  3. 1 pound peeled and deveined medium shrimp
  4. ¼ cup chopped green onions
  5. ¼ cup dry white wine
  6. ⅓ cup heavy cream
  7. 2 tablespoons chopped fresh basil
  8. 2 roma (plum) tomatoes, chopped
  9. 1 pinch cayenne pepper, or to taste
  10. salt and pepper to taste

Instructions

  1. Melt the butter in a large skillet over medium-high heat. Stir in the shrimp, garlic, and green onions. Cook and stir until the shrimp are pink on the outside, and no longer translucent in the center, about 5 minutes. Set the shrimp aside, and pour in the wine, cream, tomatoes, basil, and cayenne pepper. Bring to a simmer, then reduce heat to medium-low, and simmer until the sauce will coat the back of a spoon, about 10 minutes.
  2. Stir the shrimp back into the sauce, and season to taste with salt and pepper. Heat through and serve.

Delicious! I used dried basil and chopped sweet onion because that’s what I had on hand. Also added more garlic. I like the spinach idea and will add that next time.

Yes I added a little spinach and parmesan cheese and put it over fettuccine noodles.

This recipe is absolutely AMAZING!!! I made this for company and everyone loved loved loved it. The only change I made was I used shallots in place of the green onion because I prefer the taste of shallots. This is a WINNER!! I am going to make it with Chicken next time.

This was wonderful. I added 4 mini sweet peppers, spaghetti (1) zucchini; and boiled a small amount of Fettuccini and half and half instead of heavy cream and mixed all together in the end. It was yummy, I will make this again.

This was a restaurant quality meal. I made it as written except for using frozen shrimp. It helped add a little more liquid to the sauce and made it the perfect amount. I cooked the frozen shrimp for 12 minutes over medium heat with the lid tilted slightly to allow steam to escape. I will be making this for years to come.

Super easy crowd pleaser! The flavors were light, pleasant, and actually not at all spicy. I followed the recipe exactly and don’t feel the need to change anything next time, although i’m sure you could play around with the veggies. I did serve this on top of angel hair pasta and it was a great addition. I used a Cantina Zaccagnini Pinot Grigio for this and it was an excellent wine for the dish (light for cooking, great for drinking the rest).

This recipe is a good start. Not near enough sauce or thick enough. So, I added more fresh garlic, cream, butter and thickened it with some parmesan cheese. I also added quite a bit of cayenne to give is a little kick. Made mushroom raviolis and poured this over them. Soooooo goood!!!
