Grilled Mussels with Curry Butter

This delicious recipe involves wrapping mussels in foil, grilling them till done, and topping them with a creamy curry butter. They are extremely tasty! For a quick summer lunch, I serve these as an appetizer with warm, crusty bread for dipping and a large green salad topped with grilled chicken or shrimp.

Ingredients

  1. 3 tablespoons butter, softened
  2. 2 cloves garlic, pressed
  3. 1 teaspoon curry powder
  4. ½ teaspoon ground cumin
  5. ⅛ teaspoon salt
  6. 2 pounds mussels, scrubbed and debearded
  7. 1 cup chopped red bell pepper
  8. ¼ cup chopped fresh parsley
  9. 1 lime, thinly sliced
  10. 1 lime, cut into 4 wedges

Instructions

  1. Preheat an outdoor grill for high medium-heat and lightly oil grate.
  2. Whisk together the butter, garlic, curry powder, cumin, and salt in a small bowl.
  3. Arrange four large sheets of aluminum foil on a flat surface. Divide the mussels into four even portions and place one portion on each piece of foil. Dot the mussels with the curry mixture. Sprinkle the red bell pepper and parsley over the top of each portion. Top each with lime slices. Wrap foil tightly around the portions.
  4. Cook the packets on the preheated grill until the mussels have opened, 5 to 10 minutes. Discard any mussels which do not open.
  5. Transfer the mussels to small bowls and garnish each with a lime wedge to serve.

I didn’t change anything except i double the curry butter and throw it in the oven. Im not a fan of mussels but this is soooooo good. Hubby love it too!

Amazing. Total hit in the house for a Sunday night dinner. A good baguette to sop up juices and a little garlic butter with parsley to go on top made it perfect. Next time I’m going to sauté the peppers with some red onion in curry butter before putting on grill.

I can tell THIS would be my favorite recipe for mussels ever. I wanted to review for one reason: I am a stove-top mussel cooker, and every recipe I see, I make on the stove. If you also would rather make this on the stove top, do NOT add the lime slices. Instead, squeeze some lime juice on right before serving. The boiled lime actually REALLY overpowered everything and gave a bitter aftertaste…I found out the hard way haha!

Delicious and unique! After reading a bunch of common garlic & white wine recipes, I settled on this one for its originality. It was very colorful and the lime put a bit of a tangy twist. I loved the curry powder. It looked and smelled amazing and the sauce was just perfect for dipping bread in afterwards. I only wish that the mussels themselves carried a bit more flavor from the sauce.

These were absolutely delicious. I loved that these could be made on the grill, 98 degrees outside as I write this. Curry & mussel lovers will be in heaven. I prepared exactly as written. Only thing, I did not care for the added lime slices. Great idea, and pretty presentation, but the rind adds a bitterness that took away from the overall enjoyment of this dish. Next time I will addd lime juice and leave out the wedges during cooking. But great overall, and a definite do-over. Thanks for sharing, Diana.
