Easy Sheet Pan Shrimp Fajitas

Easy shrimp meal for a weeknight. Serve with your preferred toppings, such as cilantro, spicy sauce, sour cream, and radish that has been diced.

Ingredients

  1. 1 cooking spray
  2. 1 pound jumbo shrimp, peeled and deveined
  3. 1 teaspoon lemon-pepper seasoning
  4. 2 onions, cut into strips
  5. 2 green bell peppers, cut into strips
  6. 2 tablespoons olive oil
  7. 1 (1 ounce) package fajita seasoning
  8. 8 flour tortillas

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a large sheet pan with cooking spray.
  2. Mix shrimp and lemon-pepper seasoning together in a bowl.
  3. Toss onions and bell pepper strips with olive oil and fajita seasoning in a large bowl until thoroughly coated. Arrange shrimp on one side of the prepared pan and vegetables on the other.
  4. Bake in the preheated oven until shrimp are bright pink on the outside and the meat is opaque, about 30 minutes.
  5. Meanwhile, stack tortillas on a microwave-safe plate and cover with a wet paper towel. Heat in the microwave for 45 seconds. Serve with shrimp fajitas.

I made as instructed EXCEPT I used low carb tortilla’s (LaBanderia and or Mission brand) dropping the carb count to 30 or 34 depending on which brand of low carb tortilla’s used. We love this as is with the low carb tortilla’s, quick and easy on a Wed/Thurs night after a hard day at work and the long commute home!

The recipe is great. Made my own fajita seasoning instead of a pre-packaged pack and delayed adding the shrimp to the pan to ensure that the veggies got cooked to my desired texture and not to overcook the shrimp.

Great weeknight dinner recipe. A great way to cook peppers and onions. Followed the recipe exactly as written . We topped ours with tomatoes, cheese and avocados. A sour cream lime sauce would put this over the top.

Loved it & will definitely make again! I used red onion, peeled & deveined frozen shrimp, frozen 3 pepper blend strips. These ingredients may not be as good as fresh but it’s quick & easy when you need a break from cooking. OOPS I missed the lemon-pepper step but will add next time. I added red and yellow thin sliced bell peppers along with sliced mushrooms. Covered with olive oil and fajita seasonings marinated for 15 min or so, added shrimp. stirred up. Put in grill basket onto the BBQ. Stir until shrimp is done. Fantastic!!

Used medium size deveined peeled tail off precooked shrimp. yellow pepper instead of green pepper. 1 onion instead of 2. decreased cooking time to 15 minutes.

8.20.20 What a quick and easy recipe that turned out exceptionally well. I used the Fajita Seasoning recipe on this site, and I didn’t weigh it out, just sprinkled it on the veggies. May have been a bit heavy-handed, but they still tasted really good. The lemon-pepper added a nice flavoring to the shrimp, and everything cooked up perfectly in 30 minutes (no overcooked, rubbery shrimp). And since I’d lined my baking sheet with foil, clean-up was a breeze. The tortillas ended up a bit soggy, but that’s an easy fix. I actually have a tortilla warmer, don’t know why I didn’t use it. We thoroughly enjoyed this, and my husband’s comment was “we don’t need to forget about this one, it’s good.” Served with some Cuban black beans and rice, sour cream, and hot pickled peppers. This recipe takes very little effort, it’s delicious, and it’ll be made again.
