Using clementines in a delightful manner! This light and really simple cake is made with basic yellow cake mix from a box but with clementines and chocolate added.

Ingredients
- cooking spray
- 1 teaspoon minced garlic
- 1 (4 ounce) fillet swai fish
- 1 pinch Greek seasoning, or to taste
Instructions
- Spray a nonstick skillet with cooking spray; heat over medium-high heat. Cook and stir garlic in the hot skillet until lightly browned and fragrant, about 1 minute. Move garlic to one side of the skillet.
- Place swai fish into the skillet and season with Greek seasoning. Spoon garlic onto top of fish. Cook until the edges of fish are white and the bottom is browned, about 5 minutes. Flip and cook until fish flakes easily with a fork, about 5 minutes more.

I made it but I used fresh seasoned catfish fillets instead because they were on sale. Also made sauteed spinach and couscous. easy.
I didn’t have Greek seasoning, so I used Cajun instead…excellent!!!
Swai is such a great fish to cook with it. It is very mild in flavor and holds its shape very well without falling apart. I was feeling a little adventurous and decided to add some blackening rub along with the Greek seasoning (two flavors I would not normal mix) and it turned out good but the Greek season alone would have been perfectly fine too. This recipe is super simple and healthy and one I will use again.
