Creamy Parmesan Sauce for Fish

Ingredients

  1. 1 teaspoon butter, or as needed
  2. ¾ cup freshly grated Parmesan cheese
  3. ⅓ cup butter, softened
  4. ¼ cup mayonnaise
  5. ¼ cup chopped green onion
  6. 3 tablespoons lemon juice
  7. 2 teaspoons dried dill weed (Optional)
  8. ¼ teaspoon salt
  9. ¼ teaspoon ground black pepper
  10. 2 dashes hot pepper sauce (such as Tabasco®)
  11. 2 pounds cod fillets

Instructions

  1. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler. Line a baking sheet with aluminum foil; lightly coat with 1 teaspoon butter.
  2. Mix together Parmesan, 1/3 cup butter, mayonnaise, green onion, lemon juice, dill, salt, black pepper, and hot sauce in a medium bowl until well combined. Set aside.
  3. Lay cod fillets in a single layer on the prepared baking sheet.
  4. Cook under the preheated broiler until fish flakes easily with a fork, 7 to 8 minutes. Gently spread Parmesan mixture over fish; return to the oven and broil until topping is bubbly and lightly browned, about 2 more minutes.

Delicious! I used light mayo and light butter/spread, and less of both than called for but still so delicious (in case anyone is counting calories). I also baked because of other things going on in the oven, so added sauce a little sooner. Will make again and again. Thank you!!

I have done many times for all kinds of fish… per I do fishing frequently . I never have green onion/ scallions when I need it, so I use just onion powder. I used Parmesan cheese from the bottle never fresh. I just put It on top of the fish from the beginning… it’s all good!

Delicious! Served this tonight with steelhead trout. The flavors complimented the fish well. As recommended by a few others, I doubled the recipe except for the parmesan. Also, added chopped garlic and reduced the dill. Have added to my list of favorite fish sauces.
