Apricot Shrimp

A tasty way to include fruit in your morning! Okay, so it usually serves 4, but if you have large eaters, don’t be shocked if it’s divided! Fortunately, you can assemble this quickly. Add vanilla yogurt to the dish.

Ingredients

  1. ½ cup chopped dried apricots
  2. ⅓ cup orange liqueur (such as Grand Marnier®)
  3. 2 tablespoons unsalted butter
  4. 1 tablespoon olive oil
  5. 1 red bell pepper, cored and sliced into 1/4-inch strips
  6. ½ cup thinly sliced green onions, with some of the green tops
  7. 1 large clove garlic, minced
  8. 1 pound jumbo shrimp, peeled and deveined
  9. 2 tablespoons water
  10. 1 tablespoon fresh lemon juice
  11. 1 tablespoon soy sauce
  12. 2 teaspoons cornstarch
  13. ⅛ teaspoon freshly ground black pepper

Instructions

  1. Combine apricots and orange liqueur in a small bowl; let stand for at least 15 minutes.
  2. Heat butter and olive oil in a large skillet over medium-high heat. Add bell pepper and green onions; stir constantly for 2 minutes. Add garlic and cook until fragrant, about 1 minute. Reduce heat to medium and stir in shrimp. Cook until shrimp turn pink, about 2 minutes. Add apricot-orange liqueur mixture; cook and stir for 3 minutes.
  3. Whisk water, lemon juice, soy sauce, cornstarch, and pepper together in a small bowl. Pour into the shrimp mixture and stir until slightly thickened and heated through, about 1 minute.

This recipe is very very good. I made exactly as written. Next time (and this definitely will be made again!), I will add some heat with ground red pepper. I think the addition a just a little heat will be a great companion to the very well balanced sweet/savory flavor of the dish.

Fantastic! I did as another reviewer suggested and used apricot preserve instead of the diced apricot. I served with rice and broccoli and next time I will add the broccoli to the dish as we all mixed it together on our plates. Tasty and easy!

We really enjoyed the flavor mix with these unusual ingredients for a shrimp dish. The sauce when thickened is more like a glaze than a sauce. Next time I will double the amount of the sauce so that there is some sauce available for the rice too. I forgot the nut garnish, but it was good anyhow. Definitely adding this to the repertoire, and it is pretty easy to make too.

It sounded good and I had to buy some Grand Marnier. It was easy to make but it just lacked something. I would add a little coconut or maybe some sushi ginger. Not sure I will make it again. I’ll just drink the Grand Marnier.

easy dish to make….. I would add more onion and more shrimp. I’d make again. The soy sauce takes the sweetness away which is good. The reviewer that used the marmalade what I wanted to know before trying is if they still used the orange liquor. I would have tried had I known but followed the recipe as written

I made this recipe for my mom for Mother’s Day and she love it and she is a hard cretic to food. If she make it and she doesn’t like it you won’t see it again! i normally don’t rate the recipes i make from this site as so many already have before me. this was the recipe of the day and so i tried this when it had no ratings yet. i did not have dried apricots so i used apricot jam instead (so i got the flavor and it was a little more saucy too). otherwise i made it exactly as written – and the flavors came together really nicely. in short, we LOVED it! It was also easy to make. I’m not even a huge shrimp fan but i would make this again in a heartbeat. thank you for this recipe! PS: just ate the leftovers the next day…. still fabulous!
