My Mom’s Holiday Sausage Holiday Balls

Ingredients

  1. 4 Granny Smith apples
  2. 1 tablespoon unsalted butter
  3. 1 tablespoon canola oil
  4. 1 pound ground pork sausage
  5. 4 cups grated sharp Cheddar
  6. 3 cups instant pancake mix
  7. 2 tablespoons minced fresh chives
  8. Kosher salt and freshly ground black pepper

Instructions

  1. For the applesauce: Preheat the oven to 375 degrees F.
  2. Peel the apples, then thinly slice around the core. Place in a microwave-safe bowl and cover with plastic wrap. Microwave until the apples are tender, about 5 minutes. Place in a blender with the butter and puree. Set aside.
  3. For the sausage balls: Grease a rimmed baking sheet with the oil. Combine the sausage, cheese, pancake mix, chives, a big pinch of salt and a few grinds of black pepper in a large bowl and mix well. Roll into 1 1/2-inch balls (about the size of a Ping-Pong ball). Place on the prepared baking sheet in an even layer, leaving 1 inch between balls. Bake until cooked through and browned, 20 to 25 minutes. Serve with the applesauce.

there is no liquid included in the recipe ..its would be way too dry, 1/4 – 1/2 cup whole milk should be added or the batter wont come together.

used just 1 cup or so of self-rising flour because had no pancake mix… made these 3 times already and love them!  my new favorite snack, with or without applesauce.

Christmas Sausage Balls has been a family tradition for over 40 years! I use two cups of Bisquick to 1 pound of sausage along with 2 cups of cheese and 1/2 cup of milk to get the dough started. Always turn out great. I also use a small cookie scoop to make the process of forming the balls go faster.

I’m docking this one a star because I agree that there is too much mix in this recipe. However, fundamentally I’m a fan. I didn’t actually make this, I mashed it up with Chef Carl’s Fritas Cubana recipe, which was a big hit today at a party.

What I did was make the burger recipe pretty much as-is, though I sautéed the onions and added them to the ball mix along with some shredded cheese, rather than cooking the meatballs in them. I used about 3 cups of pancake mix, which was plenty.

I still plan on someday making this as-is, but feel free to do what I did. Maybe use Italian sausage w/peppers and onions, who knows. The sky is the limit.

There is too much pancake mix. We tasted salt much more than any sausage flavor. Next time I’m going with 2 cups pancake mix and a little extra sausage seasoning next time. The apple sauce is tremendous.

These are tasty but a bit bready. I think next time I’ll make them with less pancake mix since it had a hard time mixing altogether. Maybe 2 cups will work better.
