Chicken Thai Sausage with Thai Salsa

Ingredients

  1. 5 medium tomatoes, diced
  2. Salt, for sprinkling
  3. 3/4 cup sweet chile sauce
  4. 1/2 cup chopped fresh cilantro
  5. 1/2 cup diced red onions
  6. 1/4 cup chopped fresh Thai basil
  7. 3 cloves garlic, pressed
  8. 1 lime, juiced
  9. 2 pounds chicken Thai sausage links, from your local butcher
  10. 6 buns from your local bakery

Instructions

  1. Salt the tomatoes; let sit for 1 hour.
  2. Drain the water off the tomatoes, then add the tomatoes to a mixing bowl. Add the chile sauce, cilantro, onions, Thai basil, garlic and lime juice; mix.
  3. Boil the sausages to an internal temperature of 165 degrees F.
  4. Grill or pan-fry the sausages to crisp them. Place in the buns, then add the Thai salsa and enjoy!
