Ingredients
- 2 cups milk
- 8 ounces processed cheese, such as Velveeta, cut into cubes
- 2 cups grated pepper jack cheese
- Kosher salt
- 8 smoked beef bratwurst
- 8 good-quality hotdog buns, split
- 4 tablespoons (1/2 stick) salted butter, melted
- 1/2 cup spicy brown mustard
- 1/2 cup pickle relish
- 1/2 cup marinara sauce
- 1/2 cup sauerkraut
- 1/2 cup sweet pickles
- 1/2 cup pepperoncini
- 1/2 cup sweet pepper relish
- 1/2 cup grated pepper jack cheese
- 1/2 cup pickled sweet peppers, sliced
Instructions
- For the cheese sauce: Heat the milk in a small saucepan over medium heat. Once the edges begin to bubble, add the processed cheese and stir until it melts. Next, add the pepper jack by the handful, letting each addition melt before adding the next. Add salt to taste, cover and set aside.
- For the brats: Heat a grill or grill pan over medium-high heat. Grill the brats, flipping occasionally, until heated through and charred, 3 to 4 minutes per side. Set aside on a large board. Brush the buns with the butter and add to the grill for 20 to 30 seconds a side. Add the buns to the board with the brats.
- For the toppings: Transfer the cheese sauce to a bowl, or serve it straight from the pan, and add it to the board. Place the spicy brown mustard, pickle relish, marinara sauce, sauerkraut, sweet pickles, pepperoncini, sweet pepper relish, grated pepper jack cheese and pickled sweet peppers in separate bowls and arrange around the board.
